Zespri Kiwifruit Recipes Kiwi Lime Mint Cooler Avocado with Gold Kiwifruit Salsa and Pan fry Salmon with Green Kiwifruit

Using fresh fruits in either Cooking/Baking is always something that interests me. As you can search through my recipes list, I have tired many dishes with fresh fruit like mango, apple, orange, avocado and etc. And this “Kiwifruit” feast featured here was inspired by the ZESPRI Kiwifruit tasting event held at Heart Bistro which I have missed out last week.

With the goodwill of the folks from Edelman(ZESPRIs PR), they have sent me a set of their press kit which includes fresh kiwifruit, kiwifruit recipes, cute kiwifruit 2GB thumb drive and etc. Below are 3 recipes using fresh ZESPRI Kiwifruit which I would like to share with you and hopefully it would inspired you to in-cooperate some kiwifruit in your daily dishes too.

In Singapore you can easily get a pack of these yummy ZESPRI Kiwifruit from any leading supermarkets or fruit stalls. And do you know ZESPRI Kiwifruit are the most "nutrient dense" of popular fruits that belong in the "Super Fruits" category. Each bite contains more essential nutrients than the other 27 most popular fruits.

ZESPRI Kiwifruit also contains more than 210% of the recommended daily intakes of Vitamin C which gives you 2 times more Vitamin C than an orange. KIWI, LIME AND MINT COOLER


If resources is possible do use fresh Green or Gold kiwifruit in your drinks if you are preparing kiwifruit juice or puree to get the full goodness out of them. Here to start off, lets have a glass of freshly blended "Kiwi, Lime and Mint Cooler" to refresh your body after a hectic day at work. And by adding mint leaves it also act as a fresh and aromatic flavor to the drink with a cool aftertaste.


(serves: 2 | Preparation: 10 minutes

Ingredients:
2 ZESPRI Gold Kiwifruit, cut into halves
2 ZESPRI Green Kiwifruit, cut into halves
1 Teaspoon of Honey
15ml, Juice of Half Lime
1/4 Cup Mint Leaves
1/2 Cup Ice Cubes, optional
150ml Chilled Sprinkling Water/Sprite/Wine

Method:-
1. Blend kiwifruit with honey, lime juice, mint leaves and ice cubes till combined. (I prefer mine without ice so usually i will used chilled sprinkling water/sprite)

2. Divide into cups and top with chilled sparking water and serve.



AVOCADO WITH GOLD KIWIFRUIT SALSA


For starter lets have some crunch to go with the cooler. Does this "Avocado with Gold Kiwifruit Salsa serve on Corn Chips" sound good to you? It is a refreshing dish with hint of sweet, sour and spicy taste due to the adding of lime juice and chopped chilli. This definitely serves well as a party food or tapas to go with cocktail or beer.


Recipe adapted and modify from ZESPRI, Singapore website HERE.
(serves: 2-3 | Preparation: 10 minutes)

Ingredients:
2 Ripe ZESPRI Gold Kiwifruit, cubes
1 Ripe Avocado, cubes
1/2 Tablespoon Runny Honey
Juice of 1/2 Lime
1 Red Chilli, seed removed and chopped
1 Tablespoon Shredded Basil/Mint Leaves

Method:-
1. Mix honey, lime juice, chilies and herbs in a bowl.

2. Stir in kiwifruit and avocado cubes and marinate for about 15 - 30 minutes.

3. Upon serving, spoon mixture on corn chips and serve it as starter or pairing with wine and beer too.

You can also serve this salsa on its own by the side of the main course or mix it together with some shredded chicken and salad greens and serve as a quick salad too. No matter which is your preference style I am sure this appetizing salsa will make your meal taste great.



PAN-FRY SALMON WITH GREEN KIWIFRUIT


Salmon has earned its research reputation as a health-supportive food based on its amount of omega-3 fatty acid content. Here we are using two nutritious ingredients to form a main course which is so easy to prepare and yet so healthy for the whole family.


Recipe adapted and modify from ZESPRI, Kiwifruit Recipes booklet
(serves: 2 | Preparation: 15 minutes | Cooking: 6 - 8 minutes)

Ingredients:
2 - 3 ZESPRI Green Kiwifruit
1 Small Chilli, seeded and diced
1 Teaspoon Maple Syrup/Honey
450g Salmon Fillet, halves
1 Tablespoon Apple Cider Vinegar
1 Tablespoon Olive Oil
2 Servings of your desire Salad Greens

Dressing:
2 Tablespoons Olive Oil
1 Teaspoon Honey
2 Tablespoon Apple Cider Vinegar
Freshly Ground Black Pepper to Taste

Method:-
1. Place salmon in a deep bowl together with chili, vinegar and honey. Marinate for at least 15 - 30 minutes.

2. Meanwhile, peel and slice the ZESPRI Green Kiwifruit in wedges.

3. Heat the oil in a non-stick pan and saute the drained salmon for 3 minutes or until just cooked (according to your own preference).

4. To assemble, pile the salad greens in individual serving plates, top with kiwifruit and salmon.

5. Combine the ingredients for the dressing and drizzle over the salad. Garnish with extra black peeper if desired.

Dont back off from this dish if you are worry about the "smell" of the salmon fish as the marinade from the chopped chilli and apple cider vinegar actually has mask it quite well to flavour this dish. And furthermore to ease your cooking chore, you can even place the salmon on a grease disposal foil tray and bake in the toaster oven for about 8 minutes(turning once) depending on your preference for cooking the salmon.

Burns Night Haggis Neeps Tatties Linda Cummings


January 25th marks the annual celebration of the birth of Scotlands national poet, Robert Burns. In 1796, the Scottish bard died and his friends gathered at a supper in 1802 to read his poems, eat haggis & drink whiskey to his memory. Burns Night has been celebrated worldwide ever since! This is a miniature representation of a Haggis, split with the traditional "Dirk", served with "Tatties" (mashed potatoes!) & "Neeps" (mashed turnip) ... in this case, however the "Neeps" are actually mashed carrot & turnip! The final touch to this traditional Burns Night meal is a rich & creamy whiskey sauce ... you dont have to be a Scot to enjoy a Haggis!

Korean Clay Pot Ramyun

When we talk about the word "Ramen", it always lead us to either Japanese or Chinese style type of handmade soup Noodles which often served with meat based broth that is flavored with soy sauce or miso. From then you can select toppings such as sliced pork (Chashu), dried seaweed (Nori), spring onion and etc.

In this post I am sharing the Korean style Ramen which also known as Ramyun/Ramyeon(라면) and it is usually in the form of instant noodles(either cup or packet). Ramyeon comes is different flavour such as spicy, non-spicy, meat or vegetarian, soup and dry version. And the photo shown in this post  is one of their popular "Clay Pot Ramyun" which is spicy and often eaten with kimchi as a topping or on the side.


KOREAN CLAY POT RAMYUM


Although I do not encourage regular(such as daily/weekly) consuming of "instant noodles" but I have no obligation to stock up a few packets at home for rainy days or supper. For me, even having simple stuff like instant noodles I would also add in extra ingredients and garnish to make it more nutritious and a hearty dish.

As these few weeks seems to be raining quiet often I feel that it is the perfect weather to have a bowl of this "hot and spicy" ramyun to warm the day......


(Serve: 1      |          Preparation: 5 minutes |       Cooking: 4 - 5 minutes)

Ingredients:
1 Packet of Instant Ramen
Some Red and Green Chilli, sliced
1 Stalk Spring Onion, cut into sections
Some Cabbage Kimchi
1 Egg, optional

Method:-
1. Follow the packet instructions, add about 550ml(i use 600ml) of water into a pot and bring to boil.

2. Put noodles, soup powder, spring onion and vegetables(if you are adding extra napa cabbage) together into the boiling water.

3. Simmer for about 4 - 5 minutes till noodle is soften.

4. Dish up, garnish with some sliced chilli and kimchi. Serve hot.

i Love Mama Healthy Meal i Love Mama Bento

Finally after a few weeks of preparations (like designing and preparing of bentos for approval, practicing, lasing and etc) we managed to complete our two i-Love Mama Healthy Meal recruitment roadshows; 1st (Tampines Giant) and 2nd (Sheng Siong Supermarket) that were hosted by Mediacorp artiste Pornsak and Y.E.S 93.3FM deejay Siau Jia Hui!

Although in between there were some hard times dealing with the coordination and etc but eventually we were all thankful that everything went on smooth and we did have fun to be in part of their i-Love Mama Healthy Meal recruitment roadshows. i-LOVE MAMA BENTO
(i-Love Mama Healthy Meal)


This i-Love Mama Bento design is request by organizer as they hope I would be able to include the Mama Lemon Lion Mascot as a character in the bento meal. Although at first I was quite hesitate to try out because I am not very confident to do character bento and also I am afraid that it might not resemble their Lion Mascot.

In order to make it look as close as possible to resemble the Lion Mascot, I decided to use mashed pumpkin to colour the rice for the face and hand, then use broccoli to assemble its hair.  And also to make the facial express more 3-D like, I used black beans for the eyes and mouth. Guess overall I still could be able to score a PASS for this right :)


(Serve: 1  | Preparation: 15 minutes | Cooking: 10 minutes)

Ingredients:
150g Broccoli, trim and cut into small florets
2 - 3 Fresh Shittake Mushrooms, sliced
1 Cup of Cooked Rice
100g Of Pumpkin Cubes
70g of Salmon Fillet
3 Goyza / Wanton
Some Cherry Tomato
1 Slice of Sandwich Cheese
3 Black Beans / Blueberry
Nori (seaweed) Sheet
Some Seaweed Flakes / Bonito Flakes
Some Fresh Lettuce, optional

Tools Needed:
Bento Box
Side Dishes Food Casing
Heat Resistant Cling Wrap
Alphabet and Heart-shape Food Cutters
Food Tweezer
Small Scissor
Bento Food Pick (optional)


To Assemble the Lion Character:-

1. Remove the outer skin of the pumpkin and cut it into small cubes. Either steamed or microwave it till soft then using a fork to mash until it resemble paste like texture. Set aside

2. Spoon about 5 Tablespoons of cooked rice in a bowl, slowly mix in the mashed pumpkin until you achieve your desire colour.

3 Place 2 - 2.5 tablespoons of pumpkin rice on a piece of heat resistant cling wrap. Using hand, shape it tight into oval / round shape to form the lion head. Set Side.

4. Next using the same method as step 3, make 2 small oblong shapes using 1/2 tablespoon of pumpkin rice to make the arm of the lion. Set aside.

5. Arrange the cooked mushrooms (stir-fry the shittake mushroom with broccoli) at the top corner of the box before placing the broccoli around it (refer to the photo above) to make the outline of the lion head with the round/oval pumpkin rice in the middle.

6. Next place arrange the gyoza or wanton below the lion head to resemble the clothes. Place a few cherry tomato beside the goyza to secure the placement.

7. Shaped the two small oblong pumpkin rice ball to from the arm and place it below the head area. (refer to the photo above) Plus two tiny small rice balls for the ears above.


8. Using the black beans to form the eyes and mouth of the lion. Cut thin strips from the nori (seaweed) sheet to form the whiskers.

9. Arrange cooked salmon into the box and start adding in the "i-Love Mama" wordings using Alphabet, Heart-shape and drinking straw to cutout the shapes from sandwich cheese and punkin (heart shaped).


10. Above shows the close up look of the completed i-Love Mama Bento.


To prepare the Baked Salmon:-

1. Marinate the salmon fillet with 2 tablespoons of freshly squeeze orange juice and rind of 1 orange together with some cooking wine and dash of pepper for 5 minutes.

2. Arrange some fresh corn kernels (optional) at the base of the baking dish, top with marinated salmon and some orange rinds.

3. Baked in preheated 180°C (degree Celsius) oven for about 10 minutes or till cooked through. Sprinkler some seaweed or bonito flakes on top and assemble into the bento box.

Lunch Box 14

This is my last lunch box I prepared for my son. He doesnt want to bring lunch box to school anymore. :(

I suspect that he prefers to bring money to school so he can buy and eat whatever he likes. Noone to stop him. :/ Hmm ... I dont think Ill stop making lunch box for him. Im just going to let him have some freedom and fun buy food from the school canteen, then start making lunch box again.

This lunch was made according to my sons request. Noodles, lightly stir fried with sesame seed oil and oyster sauce. I added Kai Lan, carrots and fish cakes to it too. I actually wanted to do something with the carrots but run out of time, so I just had to leave it as it is with the hole in the middle. :P

20 Budget Meal Five Nuts Soup and Steamed Dumplings with Assorted Vegetables

Quick and Easy meal that comes with good and healthy combination of meat and vegetables are always something that busy working adults or parents look for. Here we have a fusion of Asian Steamed Dumpling with array of colourful vegetables such as Pumpkin, Carrots, Peas and Broccoli that will definitely cheers up your Monday Blue evening. These two sets of Steamed Dumpling and Five Nuts Soup meal only cost about S$12.20 which can serves around 2 - 3 persons.

To make a complete meal, I have boiled some five Nuts Soup that consists of 5 different colours of ingredients such as Fresh Fox Nuts, Lotus Seeds, Chinese Barley, Wolfberries and etc. This is a great nutty flavour soup which helps to calm nerves, strengthen Qi and nourish the body. The fresh fox nut can also helps to heal indigestion, diarrhoea and poor bladder control too.

FIVE NUTS SOUP

Ingredients: (serves 2 - 4)
300g Pork Ribs (排骨)
1 Packet of Fresh Foxnuts(茨实)
20g Chinese Barley (中国薏米)
20g Lotus Seeds (莲子)
10g Wolfberries (枸杞子)
5 Big Red Dates (红枣)
1.8 Litres of Water



Method:-
1. Blanched Pork Ribs in boiling water for 2 - 3 minutes, remove and rinse with tap water. Set aside.

2. Soak lotus seeds (unwashed) in a bowl of warm water for about 5 minutes. Remove the green pith in it to avoid bitterness. Rinse and set aside.

3. Rinse Chinese barley 2 - 3 times in a big bowl, remove any decay seeds and dirt.

4. Bring 1.8 litres of water to boil in a soup pot. Add in all the ingredients except wolfberries and when the mixture comes to boil again, lower the heat and simmer for about 30 minutes till lotus seeds and barley are soften.

5. Add in wolfberries and season with salt to taste according to own preference.


Total cost for this dish is about S$6.00 with breakdown shown below:-
Cost of Ingredients:
~ Pork Ribs = S$3.00
~ Fresh Foxnuts = S$1.50
~ Lotus Seeds, Red Dates, Wolfberries, Barley = S$1.50


Making of these dumplings can be hassle free by using the “Gyoza Mold(shown below)” which comes in handy by just placing a gyoza or wonton wrapper on top of the press (mold), add in fillings, close and press tight to form a perfect sealed gyoza or dumpling.

STEAMED DUMPLINGS WITH ASSORTED VEGETABLES

Ingredients: (serves 2, makes 12 dumplings)
125g Broccoli, cut into florets
70g Snow Peas, trimmed
120g Butternut Pumpkin, cut into 1" cubes
Half Medium Size Carrot, cut into 0.5" thick sticks
12 Round Wonton Wrappers
3 - 4 leaves of iceberg lettuce, optional

Dumplings:
150g Minced Pork
100g Medium Prawns, shelled, removed vein and cut into chunks
4 Water chestnuts, chopped
1/2 Teaspoon ginger juice
1/2 Teaspoon Cooking Wine
1 Teaspoon Sesame Oil
1 Teaspoon Cornflour
1/2 Tablespoon Light Soy Sauce
Dash of Ground Pepper
Some Chopped Spring Onion

*Note:-
~ You can replace Wonton Wrapper with Gyoza Wrapper too.


Method:-
1. Mix all the dumpling ingredients in a bowl, stir till well combine and set aside marinate in the refrigerate for at least 20 minutes.

2. Place a piece of dumpling wrapper on the dumpling(gyoza) mold, scoop 1/2 tablespoon of the mince mixture on the wrapper and fold and press the edge of the mold to enclose the fillings. Repeat with the remaining mince mixture.

3. Line two bamboo steamers with iceberg lettuce/baking paper. Divide broccoli, carrot and pumpkin and wrapped dumplings equally into each steamer, drizzle with some sesame/olive oil.

4. Stack the steamers, covered and place it into a big steamer pot or over a pan of simmering water.

5. Steam for 3 minutes on medium high heat, swap the bottom layer of the steamer with the top and continue to steam for another 2 minutes before adding in the snow peas and steam for another 1 minute or till tender.

6. When done, remove from heat. Drizzle evenly with 1/2 tablespoon of soy sauce mixture (50ml hot water, 1/2 teaspoon light soy sauce and dash of sesame oil) and serve immediately with steamed rice or on its own.


Total cost for this dish is about S$6.20 with breakdown shown below:-

~ Prawn = S$1.50
~ Wonton Wrapper = S$0.50
~ Broccoli, Pumpkin and Water Chestnut = S$2.00
~ Carrot and Sweet Peas = S$1.20

Day 3 Exploring Siam Ocean World Bangkok

Siam Ocean World is one of the largest two-storeys in-door aquarium in Southeast Asia which is located at the basement of Siam Paragon Shopping Mall in Bangkok. The exhibit is divided into 7 zones with individually designed theme and apart from its recreational options, it also proves a very good learning center for kids too.

With our Day 3 schedule packed with fun at Siam Ocean World, afternoon tea at Agalico and cruise dinner on board Chao Phraya Princess, I am sure you will be excited to follow us through the posts and read about our experience in those places.

As usual after our morning breakfast at Cuisine Unplugged which is located near the hotel lobby, we took the free Tutu Shuttle Service to the nearby BTS station to our first destination at Siam Ocean World.

At the ticketing counter, their friendly staff take time to explain to us about the different types of tickets and from their recommendation, we took the Family Package for @ 3,150 THB (SG$128.00) which includes 2 Adults and 2 Children (age 15 years old and below) and each ticket includes:-

- Glass Bottom Boat
- Pepsi (22 Oz)
- Salted Popcorn
- Happy Fish Happy Feet
- 5D Theatre

Basically Siam Ocean World is divided into 7 Zones featuring Deep Reef, Living Ocean, Open Ocean, Rainforest and etc. And within the aquarium it features more than 30,000 marine animals in its tanks which brings amazing water world experience for visitors.

Upon entering the aquarium, you would see all sort of weird and wonderful sea creatures such as king crabs and rare species like Coconut Octopus (row 1, right) and Leaf Scorpionfish (row 2, right) in Zone 1.

Further down at Zone 2, you would see a huge tank featuring marine life which you will find in the coral reefs.

Whereas at Zone 3, we get to visit the "Back of House Tour" where we have the opportunity to touch and witness the real operation behind the scenes of how the Aquarium actually works. Beside that Zone 3 also features some underwater rules of survival and how sea creatures protect themselves against predators.

For some family fun, Glass Bottom Boat ride (usual price 150 THB (SG$6.00) per person) featuring a 5 - 8 minutes ride around the tanks with one of their boatman "gliding" the boat was awesome. We enjoyed our ride spotting fishes underneath but if you are keen you can also grab a cup of shrimps to feed the fishes. The experience is pretty pretty exciting as you get to see fishes like sharks, eagle rays and etc just right below your feet through the glass bottom boat.

[Siam Ocean World] Zone 4 - Rainforest, Zone 5 Rocky Shore
There are many interesting creatures and animals waiting for you in the rainforest at Zone 4 where you get to see animals like "Giant Water Rat (3rd row, 1st picture)" which look rather cute as compared to those scary street rats. Other than that, there are also Penguin, Golden Snakes, Poison Spiders and etc.

Our family combo tickets also entitled us for the Happy Fish, Happy Feet treatment where we happily sit and relax our feet in the cold jacuzzi which is filled with little fishes that softly nibbles on our skin. Indeed it was a fun experience for first timer like us to enjoy fish spa.

Everyday around 1.00pm and 4.00pm there will be a "shark feeding show" at Zone 6  where visitors could gather around at the sitting area to watch the 5 - 10 minutes feeding show. At this zone, it features a 270-degree tunnel where you can observe sharks, stingrays and other sea creatures that are found in the deep ocean.

Remember to drop by the Sea Jellies zone before you leave the aquarium. You will be amazed by these cute jelly fish in those colour changing light tanks which makes them look so stunning under those lights.

[Fuji Japanese Restaurant] Fragrant Green Tea from Japan
We had lunch at Fuji Japanese Restaurant which is located near the food mall at ground level of Siam Paragon Shopping. Even though it was past lunch hour at around 2pm+ but there were still quite a long queue outside waiting to get it. And since it was only 3 of us, we managed to get a table in about 15 minutes.

Zura Soba is a type of chilled soba which is often served on a sieve-like bamboo tray, garnished with strips of dried nori (seaweed) and served together a dipping sauce known as tsuyu (mixture of dashi, sweetened soy sauce and mirin) with chopped spring onion and an quail egg.

Our set of Fuji Sashimi Bento Set which includes Miso Soup and Chawanmushi cost around SG$12.60 which is about 310 THB. Although the quality might not be as good when compared to those high end Japanese restaurant but with the price that we are paying the quantity is enough to feed two pax.
