Savour Din Tai Fungs Delicious yet Healthy Classics Plus Complimentary Famous Amos Christmas Cookies Gift Set While Stocks Last

As year-end festive season approaching, Din Tai Fung is also one of the favourite dining place for family gathering or celebratory meal. And from 01 November to 31 December 2012, Din Tai Fung diners will receive an exclusive complimentary box of Famous Amos Chocolate Chip Cookies (150g) with a minimum spending of S$98.00, or S$88.00 for Citibank Cardmembers.

This redeemable Famous Amos Cookies come in two different festive packaging such as the "Red Pyramid Gift Box" (shown on the 1st photo) which secured with a golden ribbon (worth S$10.00, while stocks last). Alternatively there is also another endearing square "Bear Tin"(above, worth S$11.50) which would be available only after the red pyramid gift box is fully redeemed.

Beside the cookies promotion, there are about 30% of Din Tai Fung dishes being certified as ‘Healthier Choices’ by the Health Promotion Board. So below are some of the dishes that I would like to share with you from their Healthy Signature Classics which our family love.

First on the list is definitely they well-known Steamed Pork Dumplings which is also known as Xiao Long Bao - 小笼包  (S$6.80 for 6 pieces / S$9.50 for 10 pieces). As we all know their Xiao long Bao is made with flavoursome minced pork which wrapped in delicate dough skin with at least 18 exquisite folds. I love the bites with each mouthful of juicy meat filling and melt-in-your-mouth skin.

Next as a soup lover, their new Truffle Chicken Soup (S$19.80 per serving) taste awesome with aroma of the truffles which is strong but not overpowering making it a bonus point to enhance the taste of the chicken broth. This new dish is available in a limited quantity per day at Din Tai Fung outlets such as Marina Bay Sands, Paragon, 112 Katong and Resorts World Sentosa.

Lastly, if you love the combination of beef and noodles I am assure you would like this Special Braised Beef Noodle Soup With Beef Brisket (S$11.00 per serving). The meat used is of the less fatty portion of the beef and it is also prepared by steaming to retain the flavours of the dish which makes it a healthier choice. I also love the broth which is prepared using fresh tomatoes instead of canned tomato puree which makes it taste better in both flavour and taste.

I felt like baking something healthy for a change, or at least try to. I usually sub a little whole wheat flour for all purpose flour when I bake - it may not make a big difference, but it makes me feel better. This time, I wanted to bake something that went a step beyond adding a few scoops of whole wheat flour. I wanted to use healthier fats and sugars too, which sounds a little oxymoronic now that I think about it.

This is the first time I baked without butter and sugar, two ingredients I can’t live without. I’ve never been a fan of butter and sugar substitutes so I used olive oil and agave nectar instead. Olive oil is still oil so the calories are still there but its high in polyphenols and monounsaturated fats, both of which have heart healthy benefits. Choose a light, fruity olive oil so the flavor will not dominate. In the end, I couldn’t even taste the olive oil flavor in my muffins. I went to my local TJs and picked up some agave syrup because Ive heard how it’s natural and low glycemic. But I dug a little deeper and found some alarming information; while it’s true that agave syrup is low in glucose, which is responsible for it’s low glycemic properties, it is unusually high in fructose and overconsumption of fructose causes even more health problems than glucose. Hmm... maybe this stuff isn’t as good as I thought. The whole wheat flour and ground flax are probably the least controversial healthy ingredients. I think everyone can agree that whole grains and the omega-3s from the flax are good for you.

I’m still looking for a healthy sweetener so this is still a work in progress. Good news is that the muffins taste great, considering how much good-for-you stuff is in them, you’d think they would taste, you know... “healthy.” Granted, it’s hard to beat a Costco almond poppyseed muffin, one of my favorite guilty pleasures, but these muffins didn’t make me feel dirty after I ate one.

Disclaimer: this is the first time I tried to calculate the nutritional info for something homemade and it took way more time than I thought it would. Hopefully I didn’t fudge up my math... No guarantees. ;)
Each muffin has approximately 200 calories, 8 grams of good fat, 12 grams of sugar, 4 grams of protein, 2 grams of fiber (from whole grain sources).

Healthy Whole Grain Almond Poppyseed Muffin
1 C unbleached all purpose flour
1 C whole wheat flour
1/4 C ground flax (store this in an airtight container in the fridge or freezer after opening)
2 Tbsp poppy seeds
2 1/4 tsp baking powder
1/4 tsp salt
1 C low fat buttermilk
1 large egg
6 Tbsp agave nectar or honey *work in progress
6 Tbsp olive oil *choose something light and fruity
2 tsp almond extract

Optional garnish:
Raw sugar
Sliced almonds

Preheat the oven to 350ºF, adjust a rack to the middle position. Line a muffin tin with paper baking cups or spray the tin with nonstick spray.

Whisk all purpose flour, wheat flour, ground flax, poppy seeds, baking powder, and salt in a large mixing bowl and set aside. Whisk egg and nectar until the egg is thoroughly beaten, then add the buttermilk, olive oil, and almond extract until combined.

Add the buttermilk mixture to the flour and fold to combine. There should be no large pockets of flour, a few small streaks are okay. Do not over mix. The batter will be fairly thick.

Divide the batter evenly into the tin, a 1/4 cup ice cream/cookie scoop is best. Optional: top the muffins with a light sprinkling of raw sugar and almond slices. Bake for 20 – 25 minutes at 350 degrees F on the middle rack or until a toothpick inserted in the center comes out clean. Set aside to cool.

i Love Mama Healthy Meal i Love Mama Bento

Finally after a few weeks of preparations (like designing and preparing of bentos for approval, practicing, lasing and etc) we managed to complete our two i-Love Mama Healthy Meal recruitment roadshows; 1st (Tampines Giant) and 2nd (Sheng Siong Supermarket) that were hosted by Mediacorp artiste Pornsak and Y.E.S 93.3FM deejay Siau Jia Hui!

Although in between there were some hard times dealing with the coordination and etc but eventually we were all thankful that everything went on smooth and we did have fun to be in part of their i-Love Mama Healthy Meal recruitment roadshows. i-LOVE MAMA BENTO
(i-Love Mama Healthy Meal)


This i-Love Mama Bento design is request by organizer as they hope I would be able to include the Mama Lemon Lion Mascot as a character in the bento meal. Although at first I was quite hesitate to try out because I am not very confident to do character bento and also I am afraid that it might not resemble their Lion Mascot.

In order to make it look as close as possible to resemble the Lion Mascot, I decided to use mashed pumpkin to colour the rice for the face and hand, then use broccoli to assemble its hair.  And also to make the facial express more 3-D like, I used black beans for the eyes and mouth. Guess overall I still could be able to score a PASS for this right :)


(Serve: 1  | Preparation: 15 minutes | Cooking: 10 minutes)

Ingredients:
150g Broccoli, trim and cut into small florets
2 - 3 Fresh Shittake Mushrooms, sliced
1 Cup of Cooked Rice
100g Of Pumpkin Cubes
70g of Salmon Fillet
3 Goyza / Wanton
Some Cherry Tomato
1 Slice of Sandwich Cheese
3 Black Beans / Blueberry
Nori (seaweed) Sheet
Some Seaweed Flakes / Bonito Flakes
Some Fresh Lettuce, optional

Tools Needed:
Bento Box
Side Dishes Food Casing
Heat Resistant Cling Wrap
Alphabet and Heart-shape Food Cutters
Food Tweezer
Small Scissor
Bento Food Pick (optional)


To Assemble the Lion Character:-

1. Remove the outer skin of the pumpkin and cut it into small cubes. Either steamed or microwave it till soft then using a fork to mash until it resemble paste like texture. Set aside

2. Spoon about 5 Tablespoons of cooked rice in a bowl, slowly mix in the mashed pumpkin until you achieve your desire colour.

3 Place 2 - 2.5 tablespoons of pumpkin rice on a piece of heat resistant cling wrap. Using hand, shape it tight into oval / round shape to form the lion head. Set Side.

4. Next using the same method as step 3, make 2 small oblong shapes using 1/2 tablespoon of pumpkin rice to make the arm of the lion. Set aside.

5. Arrange the cooked mushrooms (stir-fry the shittake mushroom with broccoli) at the top corner of the box before placing the broccoli around it (refer to the photo above) to make the outline of the lion head with the round/oval pumpkin rice in the middle.

6. Next place arrange the gyoza or wanton below the lion head to resemble the clothes. Place a few cherry tomato beside the goyza to secure the placement.

7. Shaped the two small oblong pumpkin rice ball to from the arm and place it below the head area. (refer to the photo above) Plus two tiny small rice balls for the ears above.


8. Using the black beans to form the eyes and mouth of the lion. Cut thin strips from the nori (seaweed) sheet to form the whiskers.

9. Arrange cooked salmon into the box and start adding in the "i-Love Mama" wordings using Alphabet, Heart-shape and drinking straw to cutout the shapes from sandwich cheese and punkin (heart shaped).


10. Above shows the close up look of the completed i-Love Mama Bento.


To prepare the Baked Salmon:-

1. Marinate the salmon fillet with 2 tablespoons of freshly squeeze orange juice and rind of 1 orange together with some cooking wine and dash of pepper for 5 minutes.

2. Arrange some fresh corn kernels (optional) at the base of the baking dish, top with marinated salmon and some orange rinds.

3. Baked in preheated 180°C (degree Celsius) oven for about 10 minutes or till cooked through. Sprinkler some seaweed or bonito flakes on top and assemble into the bento box.
