Savour Din Tai Fungs Delicious yet Healthy Classics Plus Complimentary Famous Amos Christmas Cookies Gift Set While Stocks Last

As year-end festive season approaching, Din Tai Fung is also one of the favourite dining place for family gathering or celebratory meal. And from 01 November to 31 December 2012, Din Tai Fung diners will receive an exclusive complimentary box of Famous Amos Chocolate Chip Cookies (150g) with a minimum spending of S$98.00, or S$88.00 for Citibank Cardmembers.

This redeemable Famous Amos Cookies come in two different festive packaging such as the "Red Pyramid Gift Box" (shown on the 1st photo) which secured with a golden ribbon (worth S$10.00, while stocks last). Alternatively there is also another endearing square "Bear Tin"(above, worth S$11.50) which would be available only after the red pyramid gift box is fully redeemed.

Beside the cookies promotion, there are about 30% of Din Tai Fung dishes being certified as ‘Healthier Choices’ by the Health Promotion Board. So below are some of the dishes that I would like to share with you from their Healthy Signature Classics which our family love.

First on the list is definitely they well-known Steamed Pork Dumplings which is also known as Xiao Long Bao - 小笼包  (S$6.80 for 6 pieces / S$9.50 for 10 pieces). As we all know their Xiao long Bao is made with flavoursome minced pork which wrapped in delicate dough skin with at least 18 exquisite folds. I love the bites with each mouthful of juicy meat filling and melt-in-your-mouth skin.

Next as a soup lover, their new Truffle Chicken Soup (S$19.80 per serving) taste awesome with aroma of the truffles which is strong but not overpowering making it a bonus point to enhance the taste of the chicken broth. This new dish is available in a limited quantity per day at Din Tai Fung outlets such as Marina Bay Sands, Paragon, 112 Katong and Resorts World Sentosa.

Lastly, if you love the combination of beef and noodles I am assure you would like this Special Braised Beef Noodle Soup With Beef Brisket (S$11.00 per serving). The meat used is of the less fatty portion of the beef and it is also prepared by steaming to retain the flavours of the dish which makes it a healthier choice. I also love the broth which is prepared using fresh tomatoes instead of canned tomato puree which makes it taste better in both flavour and taste.

Potato Pancakes – Delicious But They Go Right to My Thighs

There are few foods I enjoy eating more than a plate of crispy-edged potato pancakes. Unfortunately, Ive been trying to limit my carbs lately (I just cant let go of my dream to become a famous underwear model), so seeing all these amazing Latkes recipes that pop up during Hanukkah is really hard.

Anyway, just because Im not partaking doesnt mean you have to deny yourself this exquisite pleasure. Below youll see my version, which has always received rave reviews. These are garnished with smoked salmon, but my favorite way is to simply enjoy them topped with applesauce and sour cream. Boil n Bake Baby Back Ribs – Crime Against Nature Or Just Guilty of Being Delicious

Here’s what I know: I took some baby back ribs, simmered them for an hour in a flavorful liquid, glazed them in sauce, roasted them in the oven for about half an hour, and they looked and tasted really good. I also know these boil-n-bake baby back ribs would be great at any party, preferably a Super Bowl party (during which the Giants win the game).

Here’s what I don’t know: Why so many people will lose their minds over the fact that I boiled these ribs. They’ll say it’s a crime against nature, and that these are just not the same as baby backs slowly roasted over smoky coals for hours and hours. Well, duh.

These aren’t meant to replace, or even compete with, a traditionally barbecued version. This is simply a fast and tasty alternative method for having a nice stack of ribs appear on your snack table. Seriously, what’s the problem?

This is one of those recipes where I don’t want or expect you to use the same stuff I did. This is more about the quick and dirty method than any specific ingredients. I would make sure the simmering liquid is very well salted, and have a decent amount of acid and spice, but other than that, anything goes.

As far as the glaze, I just threw a bunch of stuff in a mixing bowl, in a sort of stream of saucy consciousness, but very much enjoyed the results. Chinese 5-spice is wonderful with pork, and created a beautifully aromatic base for the sweet, sour, and spicy sauce.

By the way, if it looks like I was a little short on sauce, I was, but made a little more while they were roasting, and it was fine. The amounts below will give you plenty for a rack of baby back ribs. I hope you give this a try soon. Enjoy!


Ingredients:
1 slab baby back ribs
2 1/2 quarts cold water
1/2 cup rice vinegar
6 cloves crushed garlic
1/2 onion, chopped
2 tbsp kosher salt (less if using fine salt)
1 tbsp Chinese 5-spice
1 tsp red chili flakes
2 bay leaves

For the glaze:
1 1/2 tbsp soy sauce
1 1/2 tbsp rice vinegar
1 1/2 tbsp ketchup
1 1/2 tbsp Dijon mustard
1 1/2 tbsp honey
1 1/2 tbsp brown sugar
2 tsp sambal chili paste, or to taste
1/2 tsp Chinese 5-spice

Candy Bar Cupcakes with Quick and Delicious Buttercream Frosting











 I LOVE cupcakes! But, who doesnt? I also love candy bars and thought how cool and delish would it be to throw some mini candy bars in a cupcake batter!
        I also have been on the hunt for a bakery like frosting and I think I created it along with these cupcakes! Whenever I taste a cake or cupcake from a local bakery I just cant seem to figure out how they do it.  What gives the frosting that texture and delicious flavor? There are a lot of great recipes out there, and everytime I tried them Im always a little disappointed. Some of them are with flour (which I feel is weird in a frosting) Some of them call for shortening (YUCK!), and some of them tell you to beat it til the sun dont shine.. and me being all about easy and fast, I dont have time for that!
       This frosting is SO EASY and super delicious! I think the whipping cream is what makes this frosting a winner! This is now the one I will always make! Give it a try and let me know what you think!  
       The cupcakes turned out really good as well. I actually tried a bunch of different kinds of candy bars. Twix, Rolos, Snickers and Milky Way. They were all great. I was sad that they do sink down to the bottom, but who cares! With the last bite of your cupcake, you get an extra surprise with a big bite of candy car! Thumbs up for me!

   
CANDY BAR CUPCAKES (makes 36 cupcakes)

  • 1 box (18oz) cake mix 
  • 4 eggs
  • 1/2 cup vegetable oil
  • 3/4 cup milk
  • 1/2 cup sour cream
  • small box instant pudding (I used chocolate w/ Devils Food cake mix & vanilla w/ Vanilla cake mix)
  • 24 mini candy bars of your choice (Snickers, Milky Way, Rolos)
Directions:
Preheat oven to 325 degrees. Line mufftin tins with cupcake liners.
Mix the cake mix, eggs, oil, milk, sour cream and pudding mix together with a hand mixer. Beat on low for 30 seconds and then on medium for about 2 minutes. (Batter will be very thick)
With an ice cream scoop, fill liners about 1/3 of the way full of cake batter. Top with one candy bar. Cover candy bar with 2 tablespoons of batter so its completely covering candy bar. Repeat with all.
Place in oven and bake for 18-20 minutes. Let cool completely before frosting.


QUICK & DELICIOUS BUTTERCREAM FROSTING

  • 3 1/2 cups Powdered Sugar
  • 2 sticks of Butter (1 cup), room temperature  (make sure to use REAL butter)
  • 1 teaspoon Vanilla
  • 1 1/2 tablespoons of Whipping Cream
  •  FOR CHOCOLATE FROSTING- Add in 1/4 cup of cocoa
Directions:
Mix powdered sugar and butter in a large bowl with a spatula until well combined. With a hand mixer, mix in Vanilla and Whipping cream. Beat on medium speed for 3 minutes until well combined.
(For chocolate version,  add in cocoa when mixing the powdered sugar and butter together)

Delicious Lenten Buns with Marzipan and Raspberries Vastlakuklid

Lenten buns with marzipan & raspberries / Vastlakuklid vaarikate ning martsipaniga

Its Shrove Tuesday here in Estonia today, which means that people eat copious amounts of vastlakuklid aka Lenten buns aka semlor today. For the past decade Ive been baking my own Lenten buns using this excellent recipe of mine. However, this year I decided to be a bit more adventurous, so I flirted with chocolate Lenten buns and marzipan-raspberry buns. Both were excellent and worth sharing with you. I start with the pink ones (after all, the pink-and-red-filled Valentines Day has just passed).

The recipe is very slightly adapted from the Finnish Kotiliesi. Note that these can be on your table within two hours from starting. But when I mixed the dough on Sunday morning I realised that I didnt actually have the time to bake and fill the buns. So instead of quick-rising the dough in a warm place, as usual, I transferred the bowl to a very cool garage, where it had about 24 hours time to prove and rise slowly. It did wonders to the dough, I must admit - the flavour was even better than usual, so Ill be slow-proving my yeast doughs in the future as well.

Decadent Lenten Buns, filled with marzipan and raspberries

Makes about 16

Lenten buns with marzipan & raspberries / Vastlakuklid vaarikate ning martsipaniga

Yeast dough:
300 ml milk
25 g fresh yeast or a sachet of dried instant yeast
85 g sugar (100 ml)
a pinch of salt
1 tsp ground cardamom
half of a beaten egg
450 g all-purpose/plain flour (about 800 ml)
75 g unsalted butter, softened

For brushing:
half of a beaten egg

Filling:
150 g marzipan
2-3 Tbsp milk
200-250 ml whipping or double cream
2 tsp vanilla sugar (or ordinary caster sugar and 1 tsp vanilla extract)
200 g raspberries (frozen are fine)

If using instant yeast, then mix flour, sugar, yeast, cardamom and salt in a mixing bowl. Add the lukewarm milk, whisked egg and mix until youve got a soft dough. At the end add the softened butter and knead into the dough. Cover the bowl with a clingfilm and place into a warm and draft-free place for about an hour. The dough should rise nicely and about double in size during this time.
Dust your working board with some flour and roll the dough into a long "sausage". Cut that into 15-16 chunks and form these into a nicely-shaped round balls (see my previous post for one way of doing this).
Place the dough balls onto a large baking sheet that has been covered with parchment paper. Cover the buns with a kitchen towel and let rise another 15-20 minutes.
Brush with the rest of the egg, then bake in the middle of a pre-heated 225 C oven for about 15 minutes, until the buns are lovely golden brown.
Remove from the oven and transfer to a metal rack to cool.
When cool, then cut off a top from all the buns. Using a teaspoon, scoop a small hole into the middle of each bun.
Put the scooped-out bun pieces into the food processor alongside the marzipan and some milk. Process until smooth, then spoon the marzipan filling back into the buns. Like this:

Whisk the cream and sugar until thick and fluffy. Gently stir in the raspberries (use a slotted spoon to add the raspberries - you dont want the "raspberry juice" you get when defrosting the berries). Spoon or pipe the cream onto the buns, then replace the "lids".
Dust with icing sugar and serve.
