Savour Din Tai Fungs Delicious yet Healthy Classics Plus Complimentary Famous Amos Christmas Cookies Gift Set While Stocks Last

As year-end festive season approaching, Din Tai Fung is also one of the favourite dining place for family gathering or celebratory meal. And from 01 November to 31 December 2012, Din Tai Fung diners will receive an exclusive complimentary box of Famous Amos Chocolate Chip Cookies (150g) with a minimum spending of S$98.00, or S$88.00 for Citibank Cardmembers.

This redeemable Famous Amos Cookies come in two different festive packaging such as the "Red Pyramid Gift Box" (shown on the 1st photo) which secured with a golden ribbon (worth S$10.00, while stocks last). Alternatively there is also another endearing square "Bear Tin"(above, worth S$11.50) which would be available only after the red pyramid gift box is fully redeemed.

Beside the cookies promotion, there are about 30% of Din Tai Fung dishes being certified as ‘Healthier Choices’ by the Health Promotion Board. So below are some of the dishes that I would like to share with you from their Healthy Signature Classics which our family love.

First on the list is definitely they well-known Steamed Pork Dumplings which is also known as Xiao Long Bao - 小笼包  (S$6.80 for 6 pieces / S$9.50 for 10 pieces). As we all know their Xiao long Bao is made with flavoursome minced pork which wrapped in delicate dough skin with at least 18 exquisite folds. I love the bites with each mouthful of juicy meat filling and melt-in-your-mouth skin.

Next as a soup lover, their new Truffle Chicken Soup (S$19.80 per serving) taste awesome with aroma of the truffles which is strong but not overpowering making it a bonus point to enhance the taste of the chicken broth. This new dish is available in a limited quantity per day at Din Tai Fung outlets such as Marina Bay Sands, Paragon, 112 Katong and Resorts World Sentosa.

Lastly, if you love the combination of beef and noodles I am assure you would like this Special Braised Beef Noodle Soup With Beef Brisket (S$11.00 per serving). The meat used is of the less fatty portion of the beef and it is also prepared by steaming to retain the flavours of the dish which makes it a healthier choice. I also love the broth which is prepared using fresh tomatoes instead of canned tomato puree which makes it taste better in both flavour and taste.

Traditional Christmas roast oven baked pork shoulder with honey mustard and rosemary

My traditional Christmas roast / Traditsiooniline jõulupraad
Photo by Juta Kübarsepp for the December issue of Kodu ja Aed magazine, 2012

Whats your traditional Christmas roast (assuming youre eating meat)? Turkey? Goose? Duck?

In Estonia its definitely pork, though roast poultry has become more popular during recent years. Ive been flirting with roast goose and actually served duck leg confit on Christmas Eve this year. It was delicious.

However, for years Ive been serving pork roast - a pork shoulder (kaelakarbonaad in Estonian) in a mustard-honey-garlic-rosemary marinade, to be more precise. I love that its a pretty fool-proof recipe, simple to make, with lots of flavour. And - as an added bonus - any leftovers are excellent on top of rye bread on the days after the party, or as part of a salad. So if youre not making it for a big family feast, you can still make the same amount and simply make several meals out of it.

So here you go. Nami-Namis traditional Christmas roast. On the photo above, its accompanied by black pudding (blood sausages) - another traditional Christmas dish.

Wish you all a lovely festive season!!!

Traditional Christmas roast
(Ahjupraad karbonaadist)
Serves about 10

2 kg boneless pork shoulder (Boston butt)
3-4 Tbsp honey
3-4 Tbsp Dijon mustard or Estonian Põltsamaa mustard
2-3 fresh rosemary sprigs (leaves only)
3 large garlic cloves
2 tsp sea salt

Finely chop garlic cloves and rosemary leaves, then mix with honey and mustard until combined.
Season the meat generously with salt, then spread the mustard-honey mixture all over the pork shoulder and massage into the meat.
Place the pork shoulder into a large ovenproof dish, cover with foil and place into a fridge or cold larder for 1-2 days.
Bring back to the room temperature about an hour before you plan to cook the meat.
If you have a meat thermometer, then stick it into the thickest part of the meat (you can do this through the kitchen foil).
Roast the meat in a pre-heated 160 C / 320 F oven for about 2,5 hours or until the meat thermometer has reached 82-85 C/ 180-185 F.
If you plan to serve gravy with your meat, then pour a cup of hot water into the baking tray half-way through the cooking.
When the meat is cooked, remove the foil, season the meat once more lightly with salt and then bake for another 10-15 minutes at about 200-220 C/ 390-425 F, just to brown the meat  a little.

Remove the roast pork from the oven, cover again with a kitchen foil and leave to rest for 20-30 minutes before carving into thin slices.

This recipe was also included in my latest cookbook, Jõulud kodus ("Christmas at Home"), published in Estonian in November 2011.
I also included the recipe in the December 2012 issue of Kodu & Aed magazine.

Christmas gingerbread sandwich cookies

Merry Christmas Everyone!

Mömmukökur (Mamas Cookies)

My mother only makes these gingerbread cookies before Christmas, but they are excellent at any time of the year. When I was little, I really thought it was my mothers own recipe.

Different people have different ways of making Mömmukökur. My mother makes them very thin and bakes them until they are dark brown and crisp. Others make light brown, thicker cookies that soften quickly once the icing is on. Mother allows them to stand until completely cooled, before putting in tins for storage. This is to ensure that they will stay crisp. Then, just before Christmas - usually on Þorláksmessa (December 23rd) - the four of us (my parents, brother and I) sit down together and make cookie sandwiches, sticking the cookies together two by two with vanilla butter icing.

125 g butter/margarine
250 g golden syrup
125 g sugar
1 egg
500 g flour
2 tsp baking soda
1 tsp powdered ginger
1 portion butter icing

Melt together the butter, sugar and golden syrup and mix well. Cool. Stir in the egg. Mix together flour, baking soda and ginger. Add the syrup mixture and knead until smooth. Store in a refrigerator over night. Flatten out until very thin and cut out shapes with cookie cutters or a glass. Bake at 200°C, until the cookies area a proper gingerbread brown colour. Cool completely before icing.

Note: Dont use this recipe to make gingerbread houses – this gingerbread is too fragile.
