Baked Spare Ribs with Red Wine Lees

Apart from Hong Zao Ji(红槽鸡) which is one of the common confinement dishes that most confinement nanny would prepared. This Baked Spare Ribs with Red Wine Lees (烤红糟排骨) is also another simple Foochow(Xinghua - 兴化人) homecook dishes where red wine lees is used to marinate and bake together with the spare ribs.

Thanks to one of my cooking pal, Alice whom share her recipe and tips on baking this Foochow style spare ribs dish. This is indeed a keeper recipe and it is best to use spare ribs instead of the usual pork ribs for its tender texture and nice presentation. The adding of extra ginger juice here is to remove some of that pork odor as well as act as natural tenderiser to the spare ribs.

Ingredients: (serves 2 - 3)
600g Spare Ribs(排骨), about 10 pieces
2 Heap Tablespoons of Red Wine Lees(红糟)
1 Teaspoon of White Sesame Seeds(白芝麻), optional

Seasonings:
1 Tablespoon of Cooking/Rice Wine
1/2 Tablespoon of Light Soy Sauce
1 Teaspoon of Dark Soy Sauce
1/2 Tablespoon of Sesame Oil
1 Teaspoon Fresh Ginger Juice
1 Teaspoon of Cornflour
Dash of Pepper

Method:-
1. Trim, rinse and blanched the spare ribs in boiling water for about 3 minutes. Rinse well and set aside. (this step is to allow the meat to absorb the marinate but it is optional)

2. Marinate prepared spare ribs with Red Wine Lees and seasonings till well combined.

3. Transfer mixture into a zip-lock bag and keep in the fridge for at least 30 minutes to an hour. (try not to marinate more than ah hour or else the meat will be tough)

4. Arrange marinated spare ribs on baking tray that is line with baking paper and drizzle some extra sesame oil on it before baking in preheated 180 degree oven for about 25 - 30 minutes  or till meat is cooked through (turning at least twice to get an even colour coating).

5. Remove the cooked spare ribs, arrange on serving plate and sprinkle some lightly toasted sesame seeds on it for that extra fragrant.

Pan Fried Ribs with Rosemary 迷迭香煎排骨





This is one of the earlier dishes I did using the Happy Call Pan (HCP). Again, this was hidden away in the draft folder till now. :P  Ages catching up. Ill be 41 on my coming birthday. :o Memory is failing. :p



I havent been using my HCP much lately. Just too lazy. I have been letting the oven do most of the work. Perhaps I should use the HCP to make this dish again.



If remembered correctly, the ribs done with the HCP was rather juicy as compared to using the oven. However, I usually oven grill the ribs with the onions. It adds the sweetness of the onions to the ribs. Im unable to do so with the HCP as it will burn the onion. The onions here is served as a side. Please omit it if you dont like it. I love onions though. ;)




Ingredients:


  • 2 Pork Ribs

  • 1 teaspoon Minced Garlic

  • 1 sprig Fresh Rosemary or 1/2 teaspoon Dried Rosemary

  • 1/2 Onion, sliced

  • Salt and Pepper to taste




Marinade:


  • 2 teaspoon Cooking Wine

  • 1/2 teaspoon Light Soy Sauce

  • 1 teaspoon Minced Garlic

  • a pinch of Salt

  • a dash of Pepper




How to do it:


  1. Add ribs to marinade.

  2. Set aside and let it marinate for 20 mins.

  3. In the pan, heat 1 tablespoon oil.

  4. Add in onions and half of minced garlic.

  5. Saute fragant and onions are soften.

  6. Season with salt and pepper.

  7. Side aside.

  8. Using the same pan, place the ribs and sprinkle rosemary over.

  9. Covered the pan and cook for 2 mins on each side on medium low heat till just done.

  10. To have the ribs more charred and brown, turn up the heat a little and pan fried each side well, uncovered.

  11. Remove and serve with onions.






Note:


  • Time required to cook the ribs depends on how thick/meaty the ribs are.

  • You can use any cooking wine you like.

Coke Pork Ribs New Version!


This is one of the few dishes I have learnt through a parenting forum (Mum4Mum) when I first started blogging in 2005. At that time this Coke Pork Ribs and Coke Chicken Wings are one of the famous dishes among the forum members and related food bloggers. And if you have follow most of my posts from that time you might have tried this Coke Pork Ribs recipe which used "Char Siew Sauce" as one of the ingredients.

Recently, Derrick from sgfoodonfoot has cooked the Coke Chicken Wings using Happy Call Pan (HCP) and it definitely brings back my memories and inspired me to cook this Coke Pork Ribs again which shown in this post.


COKE PORK RIBS
(using Happy Call Pan)


This is a very quick and easy finger liking dish where you can use either spare ribs or chicken wings as one of the main ingredients. But for us, we prefer spare ribs compared to chicken because of its texture and taste which is similar to Pai Gu Wang(排骨王). And if you prefer a darker brown colour spare ribs, you can add an additional 1/2 tablespoon of dark soy sauce while simmering with the coke and its sugars content would give a deep glossy coating and caramelized flavor to the end products.


(Serves: 2-3 | Preparation: 30 minutes | Cooking: 30 minutes)

Ingredients:
500g - 600g Prime Pork Ribs, cut smaller pieces
1 Teaspoon Freshly Ground Black Pepper
1/2 Tablespoon Honey
1/2 Tablespoon Dark Soy Sauce
1 Tablespoon Light Soy Sauce
1 Tablespoon Cooking Wine
1/2 Tablespoon Sesame Oil
1/2 Tablespoon Cornflour
1/2 Can Of Coke(Coca-Cola)

Method:-
1. Rinse and pat dry spare ribs. Add in all the above ingredients except Coke and marinate it for at least 30 minutes or overnight in the fridge.

2. Arrange marinated spare ribs on HCP, cover and cook for about 2 minutes on each side before adding in half can of Coke.

3. When the mixture comes to boil, cover and lock the pan. Simmer the spare ribs on the lowest heat for about 30 minutes or till sauce thicken and meat is tender.

4. Half way through the cooking time, you could add extra 1/2 tablespoon of dark soy sauce to darken the colour of the spare ribs. (remember to flip the HCP a few times during cooking in order to give the spare ribs an evenly colour coating)

5. When done, remove spare ribs from pan and garnish it with some chopped spring onion and sesame seeds. Serve hot with steamed rice.

NOTE:-
~ You can also use any Non-stick Pan for this recipe instead of Happy call Pan.

Grilled Kiwi Chili Rubbed Beef Short Ribs – Labor Day Cooking Shouldn’t Be a Lot of Work

Labor Day weekend is always a bittersweet holiday. It’s supposed to honor America’s organized labor movement, but really what it mostly celebrates is the end of summer. 

Pretty soon our grills will be covered by huge snow drifts, and the season’s warm breezes will be a distant memory. Well, not for me, as I live in California, but you get the point.

This grilled kiwi and chili-rubbed beef short ribs recipe is specifically designed with that melancholy in mind. The prep is minimal, and the ultra short cooking time means that instead of being stuck in front of a grill, you can actually enjoy more of these last precious summer days.

We tied the world record here for fewest ingredients in a marinade, with one, but thanks to the kiwi’s enzymatic magic, that’s all we need. Unlike some tropical fruit marinades, kiwi doesn’t turn the meat into mush, and provides a nice, slightly sweet and acidic base for our Ancho chili rub. I loved how this came out, and while highly-seasoned, the beefy goodness of the short ribs really came through.

2 pounds Korean-style (aka flanken style) beef short ribs
1 kiwi
For the chili rub:
1 tbsp ancho chili powder
1 tbsp sugar
1 tbsp kosher salt
2 tsp freshly ground black pepper
1 tsp garlic powder
1/4 tsp cayenne, or to taste

Boil n Bake Baby Back Ribs – Crime Against Nature Or Just Guilty of Being Delicious

Here’s what I know: I took some baby back ribs, simmered them for an hour in a flavorful liquid, glazed them in sauce, roasted them in the oven for about half an hour, and they looked and tasted really good. I also know these boil-n-bake baby back ribs would be great at any party, preferably a Super Bowl party (during which the Giants win the game).

Here’s what I don’t know: Why so many people will lose their minds over the fact that I boiled these ribs. They’ll say it’s a crime against nature, and that these are just not the same as baby backs slowly roasted over smoky coals for hours and hours. Well, duh.

These aren’t meant to replace, or even compete with, a traditionally barbecued version. This is simply a fast and tasty alternative method for having a nice stack of ribs appear on your snack table. Seriously, what’s the problem?

This is one of those recipes where I don’t want or expect you to use the same stuff I did. This is more about the quick and dirty method than any specific ingredients. I would make sure the simmering liquid is very well salted, and have a decent amount of acid and spice, but other than that, anything goes.

As far as the glaze, I just threw a bunch of stuff in a mixing bowl, in a sort of stream of saucy consciousness, but very much enjoyed the results. Chinese 5-spice is wonderful with pork, and created a beautifully aromatic base for the sweet, sour, and spicy sauce.

By the way, if it looks like I was a little short on sauce, I was, but made a little more while they were roasting, and it was fine. The amounts below will give you plenty for a rack of baby back ribs. I hope you give this a try soon. Enjoy!


Ingredients:
1 slab baby back ribs
2 1/2 quarts cold water
1/2 cup rice vinegar
6 cloves crushed garlic
1/2 onion, chopped
2 tbsp kosher salt (less if using fine salt)
1 tbsp Chinese 5-spice
1 tsp red chili flakes
2 bay leaves

For the glaze:
1 1/2 tbsp soy sauce
1 1/2 tbsp rice vinegar
1 1/2 tbsp ketchup
1 1/2 tbsp Dijon mustard
1 1/2 tbsp honey
1 1/2 tbsp brown sugar
2 tsp sambal chili paste, or to taste
1/2 tsp Chinese 5-spice
