Valentines Day Dish My Sweetheart Orange Scented Rice

Most of us loves the nice and fragrant aroma filling up from our kitchen while cooking one of our usual staple food, "steamed rice". But other than the usual white rice that we consume daily there are still many different varieties of ways and recipes whereby you can turn this simple food into simple interesting and nutritious.

This year for our Valentines theme dish, I have made these "Orange Scented Rice" to pair with another "Stir-fried Chicken with Mandarin Orange" where fresh orange zest and juice are used in both dishes.




ORANGE SCENTED RICE


Preparation: 20 Minutes                                     Cooking Time: 10 - 15 Minutes

Ingredients: (serves 2)
1 Cup Uncooked Rice
4 Cloves
3 Green Cardamom Pods
2cm Long Cinnamon Stick
2 Cloves Garlic
2 Shallots, thinly sliced
1/2 Tablespoon Olive Oil
Rind of half Mandarin Orange, thinly shred
1 Teaspoon Chicken Stock Powder
100ml Fresh Mandarin Orange Juice
1 Cup Water

Garnish:
1.5 Tablespoon Golden Raisin
1.5 Tablespoon Almond Flakes, lightly toasted
1/2 Tablespoon Sliced Spring Onion, optional


The adding of spices such as "Cloves, Cinnamon and Cardamom" infused the rice dish with a special fragrant that blends well with the fresh orange juice and zest. And it makes this rice taste similar to those "Biryani" rice which cooks with similar spices.

Method:
1. Preheat the frying pan with oil and saute Onion, Garlic, Cloves, Cinnamon and Cardamon until the onion slices turned soft and slightly golden brown.
2. Toss in shredded Orange peel and saute it for another 10 seconds before adding in the rice and chicken stock powder, stir well until the rice is coated with oil.
3. Transfer the rice into rice cooker or thermal pot, add in orange juice and water then cook until the rice is done.
4. Open the cooker lid, stir in golden raisins, cover and let it stand for another 5 minutes.
5. To serve, remove the spices(Garlic, Cloves, Cinnamon and Cardamom) from the cooked rice then using a folk to fluff in almond flakes and spring onion till well mixed.
6. Spoon the rice mixture into "heart shape" sushi mould and shaped into "Onigiri(rice ball)".


This "Orange Scented Rice" has a sweet taste from the orange juice and golden raisin together with a nutty flavour complements from the Almonds. And this goes perfectly well with the "Stir-fried Chicken With Mandarin Orange"(recipe HERE) where you can makes good used of those left-over Mandarin Oranges from Chinese New Year.

Day 7 Alfajores

Alfajores

Okay lets brush those sbrisolona crumbs off the sides of our mouth and hop on a plane from Italy to Argentina, Uruguay, Peru, Ecuador, Paraguay, Brazil or Chile (whichever country you prefer, maybe somewhere warm). The delectable alfajor, a sandwich cookie made with buttery biscuits filled a layer of dulce de leche, is a very popular snack in all of these South American countries. The cookies can be dusted with some powdered sugar or covered with chocolate. I dunno about you but anything with dulce de leche has my full, undivided attention. And yes these are as delicious as they sound.

Dulce de leche is very easy to make at home. You can either start with whole milk and use Pims recipe or start with a can of sweetened condensed milk. I chose to with go the condensed milk route but I was scared to death of the whole "can may explode" warnings because hey if it can happen, it will probably happen to me. I envisioned a loud bang and hot goo covered can shrapnel flying every which way. So better play it safe. Luckily, I found an explosion-free way to make dulce de leche using a double boiler.

Explosion-Free Stovetop Dulce de Leche
Pour the can of condensed milk in the top part of the double boiler and simmer for a few hours, stirring occasionally until the DDL is the color and thickness you like. At the end of cooking mine was almost solid. Steven turned the pan upside down and marveled that it barely moved at all.



Alfajores

1 - 1 1/4 C AP flour
1/2 C corn starch
1/4 tsp baking powder
1/8 tsp salt
1/4 C sugar
1 stick of butter
1 egg
1/2 tsp vanilla extract

Dulce de leche
Powdered sugar
Cinnamon (optional)

Preheat the oven to 350 degrees F.

Beat the butter and sugar until light and fluffy. In another bowl whisk together the flour (starting with 1 cup), cornstarch, baking powder, and salt and set aside.

Add the egg and vanilla to the butter and beat until smooth. Add the dry ingredients and beat until the dough comes together. Add some of the remaining 1/4 C of flour if the dough is too wet.

Roll out the dough to about 1/8 in thickness and cut into whatever shape you desire. Bake for 12 to 15 minutes or until the edges are light golden brown.

Cool on a rack and fill with a teaspoon or more of dulce de leche (I chose more).

Dust the tops with some powdered sugar (add a tiny bit of cinnamon if preferred). I skipped the dusting part.

A Day At The Universal Studios Singapore plus Halloween Horror Night Preview

Universal Studios Singapore - 新加坡环球影城(USS) is a theme park located within Resorts World Sentosa on Sentosa Island. The park had its soft opening period from 18 March to 26 October 2011 and its official Grand Opening was held earlier this year on 28 May 2011. For your information USS park contain 7 themed zones such as:- Hollywood, New York, Sci-Fi City, Ancient Egypt, The Lost World, Far Far Away and Madagascar all based on Universal movie hits and etc.

Since this week the lower primary are having a 4 day school break before the end year school exam I decided to bring my boy to USS as a study-break. He has being wanting to explore more and excited about those rides ever since our 1st visit last year during the After-Hour night visit(read more HERE).


HOLLYWOOD


When you first step beyond the entrance of the USS, greeting you will be the grant "Hollywood" street framed by dynamic architecture, palm trees and the famous Walk of FameTM that makes you will feel as thought you have landed in the center of the entertainment universe. If you wish to grab hold of some souvenir before heading back, remember to drop by the "Universal Studios Store" along this street for some themed collectibles, toys and apparel.

You can use any MasterCard to purchase your admission tickets in order to enjoy 20% off One-Day tickets any day of the week when you book online or purchase on-site(After discount our weekday ticket rate: Adult: S$52.80, Kid: S$38.40)! MADAGASCAR


Our 1st stop is at Madagascar: A Crate Adventure where we get to board an indoor river boat ride with Alex, Marty, Melman and Gloria, the four heroes from blockbuster movie Madagascar. Very fun and relaxing boat ride which suits kid even for the age of 3 - 4 years old with accompany adult(s).

After the boat ride you can catch up with the Madagascar Boogie just outside Penguins Mercantile at specify showtimes such as:- 11.30am, 1.30pm, 3.30pm and 5.30pm.

At the same street in the Madagascar zone,  King Julien and the Lemurs are throwing a party for their favorite freaks from New York: Alex the Lion, Marty the Zebra, Gloria the Hippo, and Melman the Giraffe at the all time family Carousel - King Juliens Beach Party-Go-Round. This is sure a catch for kids and adults of all ages where you can either ride and spins round and round with those cartoon characters.


FAR FAR AWAY


Movie stars, talking donkeys.…the land of Far Far Away showcases lifestyles of the rich and fairy taled whereby you will attracted by this unique castle which is the landmark of USS too. Here you can to enjoy Shred 4-D Adventure where you can see, hear and FEEL the action right from your seat such as water, hairy spiders, wind and etc. My boy and I have great fun and excitement watching this short movie.

Other than the delicious homemade recipe with 7-spice chicken at Goldilocks Restaurants (we had kiddy meal - criss-cross fries, dino nuggets and regular size drink S$9.50 serve in a cute portable lunchbox) you can also pop over to Fairy Godmothers Juice Bar to get some unique concoction of clourful elixirs at the juice bar. 


THE LOST WORLD


After lunch we move on to the next destination at "The Lost World" where we hurried ourselves to the 1.00pm showtime(showtimes: check the daily schedule for actual timing) at Water World. This is a must watch live entertaining show where we can witness a tidal wave of death-defying stunts, along with thrills and spills from real explosions of fire and water based on the blockbuster film, "Waterworld". But beware sitting at the center area or first few rows at the sides as you might get wet due to the splashing of water during the show.

Currently the Jurassic Park Rapids Adventure is NOT available as it is undergoing enhancement works from 10 August 2011 early 2012. So with 1 attraction down we are left with Canopy Flyer, Dino-Soarin and Amber Rock Climb. My boy loves to ride on the Canopy Flyer whereby he is not afraid of height and turns but this ride leaving mummy with wobbly feet and butterfly stomach.

Dino-Soarin can be fun too as it attracted a lot of adults in all ages whereby you ride on the back of flying dinosaurs called Pteranodons, soaring up into the sky or plunging down into the shadows.


ANCIENT EGYPT


In order to skip the long queue over at Canopy Flyer at The Lost World, we thought of heading towards the Ancient Egypt Zone and take a look before popping by to join the queue. There are total of two rides focusing Revenge of the Mummy as the main attraction and Treasure Hunters on the other hand which is more child friendly ride for the family. The Revenge of the Mummy ride is a psychological thrill ride where the roller coaster travel through a pitch black building leaving you clueless as to where you are going and what is going to happen ahead.

After asking around and seeing the some photos taken at the photo booth from the rides, we decided to give this ride a pass and head on to the "Treasure Hunters" which is a relax jeep ride which is more suitable for us. Furthermore, each young kid will be presented with a Treasure Hunters License Certifies as souvenir too.


SCI-FI CITY


With a choice of either Human or Cylon at this Sci-Fi City riders on both coasters will experience unbelievable thrills as they race towards each other and nearly collide! Zooming at speeds of 82.8 km/h, the Human Viper Mark II is a seated coaster that propels riders up to 14 storeys into the air whereas they Cylon raiders is a suspended roller coaster that will turn your world upside down as it runs through a vertical loop, corkscrew and cobra roll. Imagine with all the turns and loops....this is definitely not my cup of tea. But are you brave enough to take the challenge!!!

Giving out on the roller coasters, my boy and I decided to test our intergalactic stamina while being madly spinning on the whirling twirling attraction known as Accelerator. These individual similar "merry-go-round" ride is so fun and thrilling leaving us screaming in excitement through out the ride.   


NEW YORK


At about 4pm we are already hungry from our earlier lunch-break over at Goldilocks Restaurant mentioned above. So we decided to stop by the recommended Louis NY Pizza Parlor to have a quick bite. As it was very pretty late in the afternoon there arent much choices left on the shelf. Here we grab the "1 Slice Pizza Set" which comes with 1 slice of your desire pizza(i choose Tandoori), 1 dessert(either Panna cotta or Cheesecake) together with a cup of regular size soft drink at S$13.80.

As you can see the slice of pizza was quite big which is about the serving of 2 normal slices of pizza that we used to have. I love the thin and crusty base with topped with tender and flavorsome tandoori chicken, green chilli and well-blend seasonings. Worth trying this set especially with a cup of yummy Panna Cotta as dessert before heading to our show over at the opposite street at "Lights, Camera, Action!" where we get to witness the stage setting with awesome sound effect on a major hurricane hitting New York City. 

After a fun-filled day at the theme park, here is the crumbled map with marking on all the attractions that we have survive through. Friendly speaking other than the "roller coasters" I guess most of the attractions are still very family oriental where most of the family members can participate with.


HALLOWEEN HORROR NIGHTS



This October if you are looking for some terrified event for your Halloween Night, do consider joining this 1st Halloween Horror Nights in Universal Studios Singapore, Resort World Sentosa(Date: 21 - 23, 27-30 October 2011, Time: 8.00pm - 12 Midnight). These are some of the scenes from few of the 6 scare-zones that you will encountered during the event.

The highlights of this event are such as haunted Peranakan house to face the Vengeance of the Matriarch, Mutated zombies roam for blood in a Post-Apocalyptic Rage, Mad Scientist stalks unsuspecting victims in The Void and etc... You Can Count on Monte Cristo Benedict for Mother’s Day Brunch

I always get a ton of food wishes this time of year for creative brunch ideas, and I was thinking about doing some new type of eggs Benedict, when I happened to see a photo of a Monte Cristo sandwich. At first, it just made me want a Monte Cristo sandwich, but after that wore off, I started thinking about how I’d seen these topped with fried eggs before.

Long story short, I decided to simply make an open-faced version of the famous stuffed sandwich, and top it with poached eggs, and hopefully a new American brunch classic was born. Of course, Ill let you decide, but there was nothing I didn’t love about this plate of food. Okay, the salad was kind of phoned in, but the rest was awesome.

The base is a variation of our famous Restaurant Style French Toast recipe, which marries perfectly with the ham, cheddar and havarti. It was so tasty you really don’t even need the poached eggs. Actually, forget I said that. Do the eggs. If only so you can pop those yolks, and watch them run. Besides the eating, that has to be the best part.

I’ve also re-posted a poached eggs demo below, since poaching your eggs ahead of time is the only way to go, especially if you have a larger group. By the way, you can hold the Monte Cristo bases in a warm oven while you pull the rest of the meal together. I hope you give this new Benedict a try soon. Enjoy!


Ingredients for 4 portions:
For the batter:
2 large eggs
1/4 cup cream
1 tbsp sugar
pinch of salt
pinch of cayenne
1/4 tsp cinnamon
1/8 tsp allspice
4 thick slices of French bread
1 tbsp butter
8 slices ham
4 slices cheddar cheese
4 slices havarti cheese
chive to garnish

Meatless Meatballs! Celebrating the Magical Meatiness of Mushrooms on Earth Day

I’ve wanted to turn our famous veggie burger recipe into a meatless meatballs recipe for a long time now, and figured there would be no more appropriate occasion than Earth Day to reveal the results. After all, as I joke about in the clip, eating mushrooms is about as close to literally consuming the earth as you can get.

Despite being completely free of meat, at least the animal kind, these “meatballs” were fantastic. Thanks to a thorough browning, the mushrooms provided more than enough savoriness, and the garlic, cheese, and parsley did the rest. As impressive as I thought the taste was, what really blew me away was how close the texture was to actual meatballs.

For me, the true test of any alternative meatless recipe is whether I would eat it again, based on taste and texture alone, and not just because it’s meatless. In this case, I would…many times over. No, I’m not giving up real meatballs, but for a delicious and vegetarian-friendly change of pace, these really were tremendous.

So, whether youre going to make these because you’re a vegetarian who has been searching for a meatless version, or you’re a hard-core meat eater who just can’t believe your ears and eyes, I hope you give these a try soon. Have a happy Earth Day, and as always, enjoy!


Ingredients for 16 small meatballs:
(recipe can easily be doubled!)
1 pound white mushrooms, chopped into very small pieces
2 tbsp olive oil
pinch of salt to sauté mushrooms
1 tbsp butter
1/2 cup minced onions
4 minced garlic cloves
1/2 cup instant oatmeal
1/2 cup breadcrumbs
packed 1/4 cup chopped Italian parsley
1 ounce by weight, Parmigiano-Reggiano cheese, very finely grated on a microplane
(Note: it looks like a ton of cheese in the video, but it was only 1-oz. Because I used a microplane to grate it, it created a huge looking pile of cheese. It would be about 1/2 cup if you measure, but use weight for this ingredient!)
1 tsp salt
freshly ground black pepper and cayenne to taste
pinch of dried oregano
2 eggs
3 cups of your favorite pasta sauce.
*Let mixture sit overnight in fridge. Bake meatballs for 12-15 at 450 degrees F., then simmer in sauce for 30-60 minutes before serving.

Day 5 Kaminarimon 雷門 Asakusa

Asakusa (浅草) is located in the center of Tokyo with Sensō-ji Temple (金龍山浅草寺) as its main attraction. Kaminarimon Gate (雷門) or also known as the "Thunder Gate" is the outer of two large entrance gates that leads to the Sensō-ji Temple. With its Giant Red Lantern and statues this attraction is popular with tourists as well as hot spot for photos taking too.

Asakusa is accessible by the Ginza Subway Line, Asakusa Subway Line, Tsukuba Express and etc. And from Asakusa you could also take a 20 minutes walk across the Sumida River to the new Tokyo Skytree (東京スカイツリー) attraction.

From Tokyo Station
Take the JR Yamanote Line to Kanda Station (2 minutes, ¥130 Yen) and transfer to the Ginza Subway Line for Asakusa (10 minutes, ¥160 Yen).

From Shinjuku Station
Take the orange JR Chuo Line to Kanda Station (10 minutes, ¥160 Yen) and transfer to the Ginza Subway Line for Asakusa (10 minutes, ¥160 Yen).

Since we were at Ginza area after visiting the Tsukiji Market (read more HERE) , we decided to take a 10 minutes subway ride to visit the well-known Kaminarimon gate.


Kaminarimon gate was built more than 1000 years ago and it is the symbol of Asakusa. Cross the gate, there is this Nakamise shopping street that leads from Kaminarimon to the temple grounds.

As you could see, Nakamise Shopping Street (Nakamise-dori) stretches from the entrance of Kaminarimon gate to the main grounds of Sensoji Temple. Along the stretch it is lined by more than 80 over shops which offer local specialties, food and array of souvenirs for tourists.

Pastry master making Ningyoyaki which is small cake filled with red bean paste. These small cakes various in shaped like hello kitty, animals, traditional lanterns and etc.

About 100m towards the entrance of the Sensō-ji Temple, on the right, you would be able to catch a view of the magnificent Tokyo Skytree. We are unable to go up to the Skytree tower due to the festive crowds (Thanksgiving Day Holiday in Japan, 23 November) and tourists who had already pre-purchased the tickets.

Sensoji (金龍山浅草寺) is a Buddhist temple located in Asakusa. It is also one of Tokyos most colorful and popular temples that was built in 645 making it the oldest among all. Often there are various events held throughout the year in the Sensoji Temple area. The biggest of them is the Sanja Matsuri which is an annual festival of the Asakusa Shrine that helds in May.

Amazake (甘酒) @ ¥300 (S$4.00) per cup

Along the way back due to the cold weather, we decided to try this Amazake (甘酒) which is a sweet Japanese drink made from fermented rice. It tasted slightly sweet fragrance which makes it a best hot beverage for cold winter night.

Due to winter, the street gets darker earlier like what shown above even though it was only around 5.30 pm in the evening.

Opposite the main entrance of the Kaminarimon gate, there is a famous Dorayaki (銅鑼焼き) shop know as Kamejyu (亀十) which is just seconds away from Tokyo Metro station and Kaminarimon has being serving Dorayaki for more than 80 years.

Most people come for their Dorayaki but other than that, the also have Kintsuba (Sweet red bean paste), Monaka (Sweet red or white bean paste in wafers), Mamemochi (Sticky rice cake with beans), Candice Blackbean/Chestnut and etc.

Above shown is their signature Dorayaki (銅鑼焼き) which comes with either sweet red or white bean paste at ¥315 (SG$4.00). These are definitely the best Dorayaki that we had which is soft and fluffy, filled with refined fillings that made with beans from Hokkaido.

Egg citing free breakfast with McDonalds National Breakfast Day

On Monday, 18 March 2013; 121 McDonald’s restaurants in Singapore will participate in National Breakfast Day (a regional McDonalds initiative) by giving away over 100,000 FREE Egg McMuffins, as part of Singapore’s (and the world’s) largest ever breakfast giveaway.

Each participating McDonald restaurant in Singapore will be giving away 1,000 FREE Egg McMuffins to customers on a first-come, first-served basis. So thats a total of about more than 100,000 free Egg McMuffins plus another about 5 million Egg McMuffins will be given out free in 5000 other McDonald restaurants in Asia, Middle East and Africa to celebrate this first McDonald National Breakfast Day activity.
