Fairway Market Is it worth the hype

If you live in New Jersey you have heard all the hype about Fairway Market opening up a location in Paramus. I have been waiting for months for this even though Ive never been to a Fairway location before. Friday I left work early and drove from Morris Plains to Paramus in severe rain and wind. I was a woman on a mission. From the moment I parked my car (on the opposite end of the parking lot)to the moment I walked through the doors I was like a giddy child going to a candy store. Well, in a mere 5 minutes I went from giddy and childlike to overwhelmed and all business. I had to push my way through old ladies who stopped in the middle of the aisles and abandoned their carts, kids who walked without looking where they were going and the mass of people looking for the best deals. It was like an obstacle course of women, children and little old ladies. I felt like I was in a zoo. Granted, Fairway only opened a week and a half earlier but I still was not prepared for the crowd.

Okay,on to the important stuff, the produce section was everything I imagined. It was huge, they had every variety of apples you could think of, tomatoes of all shapes, sizes and colors, basil so fragrant it reminded me of summer. There were red, green, yelIow and orange bell peppers, poblanos, jalapenos, cubanelles. It was beautiful. Unfortunately, some of the things I was specifically looking for they didnt have. Im going to let it slide as Im sure it is a challenge to keep the shelves stocked the first couple of weeks. I was looking for broccoli rabe and for sicilian eggplant but they had neither. They only had one type of eggplant which really surprised me. Next stop, the cheese counter. It was so overwhelming. They had everything you could think of and to be honest, I couldnt think of anything I wanted because everything seemed so exotic. I did decide to pick up some ricotta salata for Pasta Norma which I made for my moms birthday on Saturday and some fresh mozzarella which was still hot. I used that to make chicken Caprese. (I wish I remembered to bring my camera to Staten Island where I cooked everything. Ill have to make everything again so I can share it with you.) The meat department was really nice. There were about 10 guys behind the counter who were trimming and cutting fillet mignon from the beef tenderloins they had on sale for $4.00/lb. I waited on that line for 30 minutes! Once I got my meat I was ready to run out of there screaming, it seemed like the crowd followed me everwhere I went except for the registers. When I got to the cashier there was no one on line. Do people just stay there all night? Was I a lucky one to make it out alive? Wow! So, I let the toothless woman (okay not toothless, she had about three teeth) ring me up and she had to question every single item. "Whats this?" she asked about the parsley, basil, cubanelle peppers. "Oh, and what about these?" she asked, puzzled. "Tomatillos." I said. "Toma..what?" It was hard for me to keep from rolling my eyes. How can Fairway hire cashiers that dont know what any of the items are? They should definitely give them a lesson in fresh produce so they dont look so silly in front of their customers. Shouldnt every employee know a little bit about fresh produce if they are going to be working there? That aside, I will definitely be going back to Fairway once things are settled there. I dont expect to buy any paper goods or canned items because I dont think Ill get any deals there but will definitely go back for produce, meat and cheeses. Maybe Ill even be brave and buy some fish.

Creole Crab Corn Chowder – Let the Good Clichés Roll!

It’s so trite to say that something is only as good as the ingredients that go into it. Everyone knows that, right? It’s just common sense. Except, there I was, eating a very good bowl of crab and corn chowder that could have, should have, been very great; but it wasn’t because I didn’t remembered that old cliché.

As I mention numerous times in the video, this would ideally be made in the middle of summer, with ears of fresh, sweet-as-sugar corn. If that’s not seasonally possible (i.e., you’re doing a Mardi Gras themed recipe in winter), you can make a perfectly fine version using a premium-quality, extra-sweet, frozen corn. Or, you can do what I did.

I used an old bag of budget-brand corn I found in the freezer. The odd thing is, I’m not sure where it came from, or what it was purchased for. There are things like vodka and fair-trade coffee beans that somehow appear in my icebox as if placed there by invisible kitchen gremlins (btw, that would make a pretty cool name for a band), and I can only assume that’s how the corn got in there.

So, while I could have just walked two-blocks, and bought an expensive bag of something sweet and delicious, I instead went ahead and used a product that only a prison warden could love. The good news is that even with the almost-flavorless corn, this chowder was very good, so if you do as I say, and not as I clichéd, yours will certainly rock.

If you’re from New Orleans, I’d love to hear if they make anything similar to this. As I admit in the video, this is not my take on some iconic Creole recipe, but a simple soup inspired by those ingredients and style of cooking. Ingredients:
2 tablespoon melted butter
1/2 cup diced onion
1/2 cup diced bell pepper, or jalapeno, or combination of any sweet/hot peppers
1/2 cup diced celery
salt and pepper to taste
1/4 teaspoon cayenne pepper
1/2 teaspoon Old Bay
1 1/2 tbsp flour
3 1/2 cup water or stock, divided (2 1/2 for the pot, and 1 cup for the blender)
1 pound sweet corn kernels, divided
2 cloves peeled garlic
8 oz fresh crab meat, divided
1/4 cup cream
1 tsp sweet Spanish paprika, or to taste
green onion to garnish

White Gazpacho! I Eat This All the Time…Like Every 20 Years

A very, very long time ago, I had a white gazpacho. It was ice cold, very tasty, and super refreshing. It was similar to a classic gazpacho, but with no tomato and peppers. It was so unusually delicious that it really made an impression.

It had a cucumber base, was garnished with almonds and grapes, and was so good, I told myself to get the recipe and put it into regular summer rotation. That was probably 20 years ago, and I haven’t had it since. Totally spaced. 

Anyway, last week I came across this on Grubstreet, and it all came back to me. I knew I must try this soup! I’ve adapted the Dovetail’s versionslightly, but it’s one of those very personal recipes that you’ll want to adjust to your tastes.

Tweaking the amounts of salt, vinegar, and sweetness from the grapes will easily alter the final product, so experimentation is a must! The same goes for the texture. Add a bit more or less water depending on your dream viscosity.

The ice cube trick is optional, but really does keep the soup nicely chilled. The temperature is so critical here – you can’t serve this too cold. By the way, the dill oil I drip on the top was nothing more than a few tablespoons of vegetable oil mashed with some fresh dill with a mortar and pestle.

So, the next time you’re looking for a cool first course for that next great garden party, I hope you give this a try. You’ll love it so much, I’m sure you’ll make it all the time! ;) Enjoy!


Ingredients for 6 small servings:
1 tbsp olive oil 
1 cup whites part of leeks, washed, chopped
salt and pepper to taste
2 English cucumbers, peeled
8-10 green grapes
1/4 cup slivered almonds
1 tbsp olive oil
1/3 cup crème fraiche, sour cream or plain yogurt
1 generous cup fresh bread cubes
2 tbsp sherry vinegar, or to taste
1 tsp salt, plus more to taste
cayenne to taste
1 1/2 cups cold water, more if needed
dill oil and/or fresh dill leaves

A Day At The Universal Studios Singapore plus Halloween Horror Night Preview

Universal Studios Singapore - 新加坡环球影城(USS) is a theme park located within Resorts World Sentosa on Sentosa Island. The park had its soft opening period from 18 March to 26 October 2011 and its official Grand Opening was held earlier this year on 28 May 2011. For your information USS park contain 7 themed zones such as:- Hollywood, New York, Sci-Fi City, Ancient Egypt, The Lost World, Far Far Away and Madagascar all based on Universal movie hits and etc.

Since this week the lower primary are having a 4 day school break before the end year school exam I decided to bring my boy to USS as a study-break. He has being wanting to explore more and excited about those rides ever since our 1st visit last year during the After-Hour night visit(read more HERE).


HOLLYWOOD


When you first step beyond the entrance of the USS, greeting you will be the grant "Hollywood" street framed by dynamic architecture, palm trees and the famous Walk of FameTM that makes you will feel as thought you have landed in the center of the entertainment universe. If you wish to grab hold of some souvenir before heading back, remember to drop by the "Universal Studios Store" along this street for some themed collectibles, toys and apparel.

MADAGASCAR


Our 1st stop is at Madagascar: A Crate Adventure where we get to board an indoor river boat ride with Alex, Marty, Melman and Gloria, the four heroes from blockbuster movie Madagascar. Very fun and relaxing boat ride which suits kid even for the age of 3 - 4 years old with accompany adult(s).

After the boat ride you can catch up with the Madagascar Boogie just outside Penguins Mercantile at specify showtimes such as:- 11.30am, 1.30pm, 3.30pm and 5.30pm.

At the same street in the Madagascar zone,  King Julien and the Lemurs are throwing a party for their favorite freaks from New York: Alex the Lion, Marty the Zebra, Gloria the Hippo, and Melman the Giraffe at the all time family Carousel - King Juliens Beach Party-Go-Round. This is sure a catch for kids and adults of all ages where you can either ride and spins round and round with those cartoon characters.


FAR FAR AWAY


Movie stars, talking donkeys.…the land of Far Far Away showcases lifestyles of the rich and fairy taled whereby you will attracted by this unique castle which is the landmark of USS too. Here you can to enjoy Shred 4-D Adventure where you can see, hear and FEEL the action right from your seat such as water, hairy spiders, wind and etc. My boy and I have great fun and excitement watching this short movie.

Other than the delicious homemade recipe with 7-spice chicken at Goldilocks Restaurants (we had kiddy meal - criss-cross fries, dino nuggets and regular size drink S$9.50 serve in a cute portable lunchbox) you can also pop over to Fairy Godmothers Juice Bar to get some unique concoction of clourful elixirs at the juice bar. 


THE LOST WORLD


After lunch we move on to the next destination at "The Lost World" where we hurried ourselves to the 1.00pm showtime(showtimes: check the daily schedule for actual timing) at Water World. This is a must watch live entertaining show where we can witness a tidal wave of death-defying stunts, along with thrills and spills from real explosions of fire and water based on the blockbuster film, "Waterworld". But beware sitting at the center area or first few rows at the sides as you might get wet due to the splashing of water during the show.

Currently the Jurassic Park Rapids Adventure is NOT available as it is undergoing enhancement works from 10 August 2011 early 2012. So with 1 attraction down we are left with Canopy Flyer, Dino-Soarin and Amber Rock Climb. My boy loves to ride on the Canopy Flyer whereby he is not afraid of height and turns but this ride leaving mummy with wobbly feet and butterfly stomach.

Dino-Soarin can be fun too as it attracted a lot of adults in all ages whereby you ride on the back of flying dinosaurs called Pteranodons, soaring up into the sky or plunging down into the shadows.


ANCIENT EGYPT


In order to skip the long queue over at Canopy Flyer at The Lost World, we thought of heading towards the Ancient Egypt Zone and take a look before popping by to join the queue. There are total of two rides focusing Revenge of the Mummy as the main attraction and Treasure Hunters on the other hand which is more child friendly ride for the family. The Revenge of the Mummy ride is a psychological thrill ride where the roller coaster travel through a pitch black building leaving you clueless as to where you are going and what is going to happen ahead.

After asking around and seeing the some photos taken at the photo booth from the rides, we decided to give this ride a pass and head on to the "Treasure Hunters" which is a relax jeep ride which is more suitable for us. Furthermore, each young kid will be presented with a Treasure Hunters License Certifies as souvenir too.


SCI-FI CITY


With a choice of either Human or Cylon at this Sci-Fi City riders on both coasters will experience unbelievable thrills as they race towards each other and nearly collide! Zooming at speeds of 82.8 km/h, the Human Viper Mark II is a seated coaster that propels riders up to 14 storeys into the air whereas they Cylon raiders is a suspended roller coaster that will turn your world upside down as it runs through a vertical loop, corkscrew and cobra roll. Imagine with all the turns and loops....this is definitely not my cup of tea. But are you brave enough to take the challenge!!!

Giving out on the roller coasters, my boy and I decided to test our intergalactic stamina while being madly spinning on the whirling twirling attraction known as Accelerator. These individual similar "merry-go-round" ride is so fun and thrilling leaving us screaming in excitement through out the ride.   


NEW YORK


At about 4pm we are already hungry from our earlier lunch-break over at Goldilocks Restaurant mentioned above. So we decided to stop by the recommended Louis NY Pizza Parlor to have a quick bite. As it was very pretty late in the afternoon there arent much choices left on the shelf. Here we grab the "1 Slice Pizza Set" which comes with 1 slice of your desire pizza(i choose Tandoori), 1 dessert(either Panna cotta or Cheesecake) together with a cup of regular size soft drink at S$13.80.

As you can see the slice of pizza was quite big which is about the serving of 2 normal slices of pizza that we used to have. I love the thin and crusty base with topped with tender and flavorsome tandoori chicken, green chilli and well-blend seasonings. Worth trying this set especially with a cup of yummy Panna Cotta as dessert before heading to our show over at the opposite street at "Lights, Camera, Action!" where we get to witness the stage setting with awesome sound effect on a major hurricane hitting New York City. 

After a fun-filled day at the theme park, here is the crumbled map with marking on all the attractions that we have survive through. Friendly speaking other than the "roller coasters" I guess most of the attractions are still very family oriental where most of the family members can participate with.


HALLOWEEN HORROR NIGHTS



This October if you are looking for some terrified event for your Halloween Night, do consider joining this 1st Halloween Horror Nights in Universal Studios Singapore, Resort World Sentosa(Date: 21 - 23, 27-30 October 2011, Time: 8.00pm - 12 Midnight). These are some of the scenes from few of the 6 scare-zones that you will encountered during the event.

The highlights of this event are such as haunted Peranakan house to face the Vengeance of the Matriarch, Mutated zombies roam for blood in a Post-Apocalyptic Rage, Mad Scientist stalks unsuspecting victims in The Void and etc... Meatless Meatballs! Celebrating the Magical Meatiness of Mushrooms on Earth Day

I’ve wanted to turn our famous veggie burger recipe into a meatless meatballs recipe for a long time now, and figured there would be no more appropriate occasion than Earth Day to reveal the results. After all, as I joke about in the clip, eating mushrooms is about as close to literally consuming the earth as you can get.

Despite being completely free of meat, at least the animal kind, these “meatballs” were fantastic. Thanks to a thorough browning, the mushrooms provided more than enough savoriness, and the garlic, cheese, and parsley did the rest. As impressive as I thought the taste was, what really blew me away was how close the texture was to actual meatballs.

For me, the true test of any alternative meatless recipe is whether I would eat it again, based on taste and texture alone, and not just because it’s meatless. In this case, I would…many times over. No, I’m not giving up real meatballs, but for a delicious and vegetarian-friendly change of pace, these really were tremendous.

So, whether youre going to make these because you’re a vegetarian who has been searching for a meatless version, or you’re a hard-core meat eater who just can’t believe your ears and eyes, I hope you give these a try soon. Have a happy Earth Day, and as always, enjoy!


Ingredients for 16 small meatballs:
(recipe can easily be doubled!)
1 pound white mushrooms, chopped into very small pieces
2 tbsp olive oil
pinch of salt to sauté mushrooms
1 tbsp butter
1/2 cup minced onions
4 minced garlic cloves
1/2 cup instant oatmeal
1/2 cup breadcrumbs
packed 1/4 cup chopped Italian parsley
1 ounce by weight, Parmigiano-Reggiano cheese, very finely grated on a microplane
(Note: it looks like a ton of cheese in the video, but it was only 1-oz. Because I used a microplane to grate it, it created a huge looking pile of cheese. It would be about 1/2 cup if you measure, but use weight for this ingredient!)
1 tsp salt
freshly ground black pepper and cayenne to taste
pinch of dried oregano
2 eggs
3 cups of your favorite pasta sauce.
*Let mixture sit overnight in fridge. Bake meatballs for 12-15 at 450 degrees F., then simmer in sauce for 30-60 minutes before serving.

“BBQ” Broiled Red Snapper – This One’s For the Haters

There’s a fairly large population of folks who just don’t like fish. I’m not talking about people with allergies, but those poor souls who’s worst nightmare is arriving at a dinner party, only to find out the main course is fish. Their reasons are as diverse as they are unfortunate.

Well, this broiled red snapper recipe may be just what the doctor ordered. Normally we don’t want to cover up the delicate flavors of the seafood, but in this case, we have no choice. It’s not like you can’t tell you’re eating fish, but close enough.

By the way, the last time I made red snapper, a few people wondered out loud if that was a wise choice, sustainability-wise. I believe the variety I used was local and not in danger, but I know it’s on some no-eat lists. However, things may be looking up for red snapper in the Gulf.

I just read that there appears to be an abundant red snapper population there, and fishermen are anxiously waiting for the bureaucratic powers that be to raise the limits. You can read more about that here. Of course, this will work with any white fish, so I hope you give it a try soon. Enjoy!

2 (7-oz) red snapper filets
2 tbsp mayonnaise
1 tbsp lemon juice
1 tbsp bbq sauce

Pizza Sauce – Let’s Play ‘Hide the Little Fish’

I can assure you that the anchovies in this pizza sauce recipe are there for the subtle saltiness and unique savoriness they provide, and not just so you can tell your friend (the one who really hates anchovies) that they just ate some. Could it be for both? Sure.

This pizza sauce recipe represents a new and improved version of the one we posted way back in 2007. We snuck in some of the aforementioned fish, and we’re also using both fresh and dried oregano. I love this sauce. If there’s a tastier, all-purpose pizza sauce recipe out there, I haven’t tried it.

Convention wisdom says that great pizza is all about the crust. Which is certainly a huge factor, but if you were given the choice between a great crust topped with a bad sauce, and a grocery store crust made with a delicious, world-class sauce, which would you prefer?

Texture aside, no mater how theyre combined, flour, water, and yeast can only taste so bad. But, a terrible sauce can actually make a slice of pizza inedible. I can’t remember ever not eating a piece of pizza because the crust was so awful, but Ive given up after biting into an inferior sauce before.

Of course, around these parts the argument is completely academic since we’ve not only provided you with a plan for perfect sauce, but given you several great pizza dough recipes, like our famous no-knead pizza dough, as well as the venerable Wolfgang Puck California-style dough recipe. Ingredients (makes about 3 cups):
3 tbsp olive oil
2 anchovy filets
4 cloves garlic, minced
2 tbsp chopped fresh oregano
1/4 tsp red pepper flakes, or to taste

Tarte Tatin – See What the Others Aren’t Willing to Show You

When I looked at some other tarte tatin recipes on YouTube, I noticed that very few showed the “flip on to the plate” step. They would just skip from the out of the oven shot to the final beauty shot. The reason of course, is that very few tarte tatins come out of the hot pan perfectly, and if they showed that, then you may not think they are as awesome as their profile says they are.

So, it’s with much pride that I show you the whole ugly scene that is the tarte tatin dismount. The good news is, it’s very simple to slap everything back on the crust before it cools, and none will be the wiser. This is even easier if you’re doing a version with very soft and tender apples and lots of caramel, which is my preference, as you’ll see.

If you do a Google image search for a classic, old recipe like this, you usually see a lot of photos that look alike, but that’s not necessarily so with tarte tatin. You’ll see an amazingly diverse array, which is fascinating since they were all made with the same few basic ingredients. Most of this is a result of cooking time in the pan before baking.

Some feature firm, barely cooked apples, while others cook the fruit all the way down to a buttery, caramelized jam. The beauty of a recipe that uses just pastry dough, butter, apples and sugar to make the magic, is that no matter how yours comes out you’ll enjoy it. Of course, you’ll want to hedge your bets with some vanilla bean ice cream to be safe. I hope you give this classic French treat a try soon. Enjoy!

I have no problem waiting a year to watch feature films via my overpriced cable provider, but the major drawback is that I never have any clue whats gong on during the Academy Awards show. Majestic Bay Seafood Restaurant At Gardens By The Bay

Located below the Flower Dome (gardens by the bay), Majestic Bay Seafood Restaurant is a newest venture for Chef Yong Bing Ngen. The 110 seater restaurant offers a spacious layout for both family and group dining as well as a private room that can occupy up to 14 guests. With its must try Signature Bays Kopi Crab and Baked Rice and Assorted Seafood in Chef’s Recipe Sauce, below are some of the dishes that we have tried two weeks ago.

For starter, we get to try 3 selections of Dim Sum items from their menu which are Seared Chilli Crab Meat Bun, Steamed Shanghai Dumpling Pork and Steamed Siew Mai Dumpling. The Chilli Crab Meat Bun was good with a crispy outer skin and nutty flavour from the sesame seeds. When bite, it burst with a spicy sweet chilli crab sauce which makes you having no intention to share the rest of the bun with those sitting at your table.

On the other hand, the Steamed Shanghai Dumpling Pork is surprisingly good with a thin layer of outer skin wrapping the meat filling and tasty soup broth.

Seared Chilli Crab Meat Bun - 辣椒蟹生煎包 (S$4.50 for 3 pcs)

Steamed Siew Mai Dumpling - 香菇蒸烧卖 (S$4.50 for 4 pcs)


Being a Cantonese styled restaurant, Majestic Bay offers quite a range of soup menu from Soup Of The Day - 瓦煲老火汤 (S$18.00 for 2-4 pax, S$27.00 for 5-8 pax) to Chicken soup with cordyceps flower, conpoy and chinese ham or Bird nest with abalone and assorted seafood treasure soup and etc. And as as soup lover, I definitely love their double-boiled soup which was boiled over low heat till thick and flavorsome. 

Steamed, Live Prawns, Minced Garlic - 金银蒜蒸开边生虾 (Market price) uses fresh live prawns that are being shelled and butterfly in order to reduce the cooking time as well as making it easier for guests to enjoy the dish without dirtying the fingers to shell the prawns. Overall the prawns were sweet and fresh but the minced garlic taste was a bit strong towards my liking.


The Bay’s Signature “Kopi” Sauce Live Crab - 冠华咖啡焗肉蟹 (market price) used Sri Lankan Mud Crab which was prepared using 3 different types of coffee beans such as Arabica, Brazilian and White Coffee together with Apple Jam, Butter and Shaoxing wine to achieve a caramelized taste. When the crab was presented on the table,  the serving staff will pour Shaoxing wine and coffee liquor over it and light up the crab to creating a "Fire Crab" effect sending coffee aroma into the air.

But although I am a coffee lover I still prefer salted egg crab as compared to this.

{MUST TRY} Baked Rice, Assorted Seafood, Chef’s Recipe Sauce - 海鲜大烩焗饭 (S$68.00 for 4-6 pax, S$88.00 for 7-12 pax) is definitely the HIT for that night with the 7 of us all agreed and raising our hands crowing it the best dish fellow by their signature Bays Kopi Sauce Crab.

According to Janice, this dish was inspired by one of the popular Portuguese dish Chef Yong sampled in Macau and he adapted the recipe for local palate. The plate of seafood baked rice was indeed filled with treasures such as baby abalone, scallops, mussels, prawns and etc that topped with spiced cream sauce and generous amount of mozzarella cheese. Overall the dish reminded us of Paella but with a hint of spicy Japanese Curry taste that blend well with the sauce and make the whole dish very addicting.

{MUST TRY} Pan-fried Radish Cake With Prawns and XO Chilli Sauce - 极品酱鲜虾萝卜糕 (S$20.00; S$30.00) was one of the highlight for that night. Although this dish might be pricey as compared to those served in foodcourts or dim sum restaurants but with generous amount of shelled prawns and chunks of homemade radish cake that pair with their in-house XO chilli sauce. I am sure you wont want to give this a miss.

Sweet’s temptation (S$20.00) which suitable for 4 person includes Glutinous Rice Dumpling with Fresh Cream Stuffing; Glutinous Rice Dumpling with Yam Paste Stuffing (coated with shredded coconut); Steamed Custard Bun with Salted Egg Yolk and Bay’s Chinese Pancake with Red Bean Paste.

Although their Salted Egg Custard Bun taste great with soft outer skin and savory filling but my personal preference goes to their Glutinous Rice Dumpling with Yam Paste Stuffing and Bay’s Chinese Pancake with Red Bean Paste. Love the crispy outer skin of the Chinese Pancake which is not too oily and it goes well with the fragrance and smooth red bean paste.

“Pad Thai” Popcorn – How Five Seconds of Late Night TV Changed the Future of Caramel Corn

Every once in a great while, I get a food wish from someone I admire and respect so much that I just can’t say no. This “Pad Thai” popcorn recipe was their latest request, and as always, I was more than thrilled to make this very influential person’s snack dream come true. Who is this mystery foodie? Me!

I was channel surfing late one night, and caught the very tail end of a show featuring a hot spot in Charleston, SC, called The Gin Joint. The theme was unique bar eats, and the host was talking about something called, “Pad Thai” popcorn. What was that?

I heard those words, and saw maybe five seconds of footage of what looked like caramel corn in a basket, and that was it. Frustrated, but quite excited, I jumped online to find the bar’s website, and hopefully the recipe. Nothing.

There were a few links with people talking about it, and a couple cell pictures, but no actual official recipe to be found. So, I decided to give myself a food wish – figure out how to recreate this extraordinary-sounding snack. I decided to simply fortify a standard caramel corn recipe with peanuts, lime, hot chilies, fish sauce, and cilantro.

Maybe it was beginner’s luck, or the collective consciousness of all the poor souls who’ve tasted that popcorn and desperately wished they could make it at home, but it came out incredibly well. Crispy, crunchy, sweet, spicy, aromatic, and awesome! You know I’m a fan of the hyperbole, but it’s with all sincerity that I say, this may be the greatest caramel popcorn-related snack breakthrough since balls.

By the way, since this was my first attempt, please feel free to adjust the ingredients amounts and report back. I think next time I’ll add a bit more lime and fish sauce, for a little extra kick. I may also explore using tamarind juice and/or palm sugar. Anyway, I hope you give this unbelievably addictive “Pad Thai” popcorn a try soon. Enjoy!


Ingredients for about 8 cups of Pad Thai Popcorn:
1/3 to 1/2 cup popping corn kernels (roughly 8 cups prepared popcorn)
1 cup finely chopped dry-roasted, salted peanuts
1/4 cup chopped cilantro
For the caramel sauce:
1/2 cup packed brown sugar
1/4 cup vegetable oil
1/4 cup corn syrup
2 or 3 tsp fresh lime juice
1 tbsp freshly grated lime zest
1 1/2 tbsp Asian fish sauce (fyi, if you dont use fish sauce, youll have to add salt)
1 rounded tablespoon Sambal red chili sauce, or very finely diced fresh hot chilies
rounded 1/4 teaspoon baking soda (not baking powder)
*bake 45 minutes at 250 degrees F., tossing 3 or 4 times during the cooking.

The Goodness Of Homemade Yoghurt

From a glance at the supermarket dairy section you would see many different varieties of Yoghurt from either plain to those with fruit flavour and toppings such as jam, nuts and etc. Yoghurt is so wholesome and yet easy to make without any secret in the recipe. So with a foolproof recipe anyone can start making their own yoghurt at home.

Just for a note, the bacteria used to make yogurt are known as "yogurt cultures" and from fermentation of lactose, these bacteria produces lactic acid which acts on milk protein to give yogurt its creamy texture and characteristic.


HOMEMADE YOGHURT


I used to make yoghurt years back when my boy was around 8 months old during the period when he started mashed food and puree. And I still remember his favourite choice are "Yogurt with Peach and Banana" and "Yogurt with Mashed Avocado".

A few months back after a brunch treat over at Sheries (maameemoomoo a 1/2 food blog) house where she prepared  her yummy Banana Pancakes and irresistible homemade yoghurt(stay tune for her recipe too) for us, I cant held thinking about it till I started making homemade Yoghurt again.


(Serves: 2-3 | Preparation: 15 minutes | Fermentation: 8 - 10 hours)

Ingredients:
500ml Fresh Full Cream Milk
1 Tablespoon Plain Yoghurt with Live Culture


Method:-
1. Heat the milk over low heat, stirring gently until bubbles and steam begin to appear on the surface (82°C), remove from heat.

2. Cool the milk to lukewarm or until your finger can comfortable dip in the milk for a few seconds. (preferably around 42°C)

3. Scoop about 1 tablespoon of the yoghurt cultures in a bowl, add in about 50ml of the lukewarm milk and mix well. Next pour the mixture back into the remaining milk and stir well.

4. Next pour the cultured milk into a clean sterilized glass jar or any non-reactive container and cover the lid on.

5. Lastly set the jar on the counter top in your kitchen and wait for the culture to convert the natural sugar in milk to lactic acid before it turns into yoghurt. The whole process takes about 8 - 10 hours depends on the weather. (I usually make the yoghurt at night and let is set at the counter top overnight and it would be ready in the morning around 7am)


6. Put the jar in the refrigerator immediately to slow down fermentation and as well as firm the texture of the yoghurt. It will last for about 1 - 2 weeks in the fridge.

These are some of the plain yoghurts that are available in major supermarkets.



There are so many ways you can enjoy the wholesome goodness of homemade yoghurt such as eating it plain on its own or drizzle with of Honey or Gula Melaka Syrup to sweeten its taste. If you want something more cafe style or with bits of crunch, you could also add in cut fruits or Muesli like what I did from the photos shown above.

Important Note(s):-
~ Do not add in the live yoghurt cultures if the warm milk is above 42°C or else the heat will killed the live cultures and effect the texture and overall result of the homemade yoghurt.

~ Different brands of plain yoghurt might produce different results so you have to take note and check the labels to ensure they contain yoghurt making bacteria such as Lactobacillus aci-dophilus, Streptococcus thermophilus.
