April 20 Budget Meal Seaweed and Minced Pork Soup Fried Bitter Gourd Omelette and Ma Po Tofu

I have being craving for those Cze Char style Seaweed Soup recently and after asking around for a quick and easy recipe. I managed to settle on Alices version where she is very patience to guide me through  the steps during one of our chat on MSN. Her method was pretty good with boiling of  fresh ikan bilis stock and she also share on how to "clean" the seaweed by frying it dry in a non-stick pan which will enhance its fragrance and at the same time removes any dirt that is trapped in between the seaweed.

This set of Budget Meal cost about S$6.60 which is good enough for 2 - 3 servings.

SEAWEED SOUP

Ingredients: (serves 2 - 3)
1/4 Portion of Dried Seaweed, cut from a 20cm round
60g Minced Pork
2 Garlic Cloves, lightly pound
1 - 2 Slices of Ginger
1 Stalk of Spring Onion, cut into sections
1 Medium Tomato, cut into wedges
1 Egg, lightly beaten
1 Litre Hot Water
1/2 Cube or Knorr Ikan Bilis Stock

Method:-
1. Marinate minced pork with light soy sauce, sesame oil, pepper and corn starch for about 5 minutes.

2. Heat up 1/2 Tablespoon of oil in a soup pot, saute ginger, garlic and spring onion till fragrant then add in minced pork and continue to stir-fry for a few minutes till cooked through.

3. Pour in hot water and bring to boil, add stock cube, let it simmer for 2 - 3 minutes. Remove the garlic, ginger and spring onion before adding in the tomato and seaweed.

4. Turn off the heat, slowly swirl in the beaten egg and serve.


Total cost for this dish is about S$1.80 with breakdown shown below:-
Cost of Ingredients:
~ Seaweed = S$0.40
~ Egg = S$0.20
~ Tomato = $0.20
~ Minced Pork = S$1.00


Whenever we visit any Cze Char(煮炒) stalls, we will always order either their "Bitter Gourd Omelette" or "Egg Foo Yong(芙蓉蛋)". Here we can also prepare a simple version of this delicious omelette dish at home according to personal preference. If you are not sure on how to choose the bitter gourd, you can always ask the stall owner for help. But if you are getting it from supermarket, just try to get those with bright jade green colour and wider pattern lines so that they are not on the extreme bitter taste.

BITTER GOURD OMELETTE

Ingredients: (serves 2 - 3)
2 Large Eggs
100g (1/3 Portion of a Medium) Bitter Gourd, thinly sliced
2 Garlic Cloves, finely minced
1 Teaspoon of Light Soy Sauce
Dash of Pepper and Sesame Oil
1.5 Tablespoon Oil for frying Omelette


Method:-
1. Before cooking the bitter gourd, add 1 teaspoon of salt and marinate for 5 minutes, wash and squeeze dry to reduce the bitter taste.

2. Heat up oil in frying pan, saute garlic until fragrant. Add in bitter gourd and mix well.

3. Stir-fry the bitter gourd until soft, slowly swirl in the beaten egg (beat egg, light soy sauce, sesame oil and pepper together till combined) .

4. Pan-fry at medium heat until set, turn it over and continue to fry until golden brown.

5. Dish up and serve.

~ 2 Eggs = S$0.40


It has being long since I last set my wok with this popular Chinese dish which is known as Mo Po Tofu(麻婆豆腐). It has a combination of tofu (beancurd) and minced meat that cooks in a spicy chili and bean based sauce. For this home version of Mo Po Tofu, I used the instant Lee Kum Kee Mo Po Tofu sauce which is slightly mild compare to the original "spicy" taste that we ate from Chinese Restaurants.

MA PO TOFU

Ingredients: (Serves 2 - 4)
90g Minced Pork
250g Soft Tofu, dice in 1" cubes
2 Garlic Cloves, finely chopped
1/2 Teaspoon Sugar, optional
1 Packet of Lee Kum Kees Ma Po Tofu Sauce

Method:-
1. Preheat frying pan with 1.5 tablespoon of oil and saute minced garlic till fragrance before adding in the minced pork.

2. Stir-fry minced pork till cook through, pour in Lee Kum Kee Sauce For Ma Po Tofu and simmer for 10 seconds.

3. Slowly add in the drained tofu and give it a quick stir to absorb the flavour from the Ma Po sauce and slightly thickened. (You can add in some sugar to balance the spicy and salty taste from the sauce)

4. Dish up on serving plate, sprinkle with some chopped spring onion and serve immediately with warm steamed rice.


Total cost for this dish is about S$3.90 with breakdown shown below:-

~ Silken Tofu = S$1.50
~ Lee Kum Kee Sauce = S$1.40
~ Minced Pork = S$1.00


Using simple ingredients like EGG and TOFU you can also whipped up something delicious like what we had for dinner. And I am sure most of you can also come out with some other delicious dishes using these simple ingredients too. Most important you know what is good for your family and  I am sure you will try to incorporate as many healthy ingredients as you can in your daily cooking.

White Gazpacho! I Eat This All the Time…Like Every 20 Years

A very, very long time ago, I had a white gazpacho. It was ice cold, very tasty, and super refreshing. It was similar to a classic gazpacho, but with no tomato and peppers. It was so unusually delicious that it really made an impression.

It had a cucumber base, was garnished with almonds and grapes, and was so good, I told myself to get the recipe and put it into regular summer rotation. That was probably 20 years ago, and I haven’t had it since. Totally spaced. 

Anyway, last week I came across this on Grubstreet, and it all came back to me. I knew I must try this soup! I’ve adapted the Dovetail’s versionslightly, but it’s one of those very personal recipes that you’ll want to adjust to your tastes.

Tweaking the amounts of salt, vinegar, and sweetness from the grapes will easily alter the final product, so experimentation is a must! The same goes for the texture. Add a bit more or less water depending on your dream viscosity.

The ice cube trick is optional, but really does keep the soup nicely chilled. The temperature is so critical here – you can’t serve this too cold. By the way, the dill oil I drip on the top was nothing more than a few tablespoons of vegetable oil mashed with some fresh dill with a mortar and pestle.

So, the next time you’re looking for a cool first course for that next great garden party, I hope you give this a try. You’ll love it so much, I’m sure you’ll make it all the time! ;) Enjoy!


Ingredients for 6 small servings:
1 tbsp olive oil 
1 cup whites part of leeks, washed, chopped
salt and pepper to taste
2 English cucumbers, peeled
8-10 green grapes
1/4 cup slivered almonds
1 tbsp olive oil
1/3 cup crème fraiche, sour cream or plain yogurt
1 generous cup fresh bread cubes
2 tbsp sherry vinegar, or to taste
1 tsp salt, plus more to taste
cayenne to taste
1 1/2 cups cold water, more if needed
dill oil and/or fresh dill leaves

Japanese Oyakodon and Miso Soup

JAPANESE OYAKODON RECIPE

Ingredients: (serves 3)
1.5 cup of steamed rice
1 Chicken Breast Meat, about 200g
1 onion, thinly sliced
Chicken stock (I used concentrated chicken stock and mix with water)
Mirin
3 eggs
Soy sauce to taste

Preparation:
1. Cooked steamed rice and set aside.

2. Fry the sliced onion till fragrant and add in the chicken pieces.

3. Add in the chicken stock, mirin and soy sauce to taste.

4. Simmer over medium heat for a few minutes.

5. Crack the eggs into a bowl but do not beat the eggs. Instead, use a knife to slightly cut the egg yolk.

6. Once the chicken is cook, pour the egg over.

7. Let the egg cook for about 3 minutes, till the egg yolk is slightly hardened.

8. Turn off the heat.

9. Put the steamed rice into deep serving bowls and serve the simmered chicken and egg on top.


MISO SOUP

Ingredients:
Instant miso soup paste from supermarket


Preparation:
1. Get a packet of instant miso soup paste from the supermarket.

2. Pour hot water and serve.


Toal Cost: S$3.60
Chicken = $2.00
Eggs = $0.60
Onion = $0.20
Instant Miso paste $0.80 per packet

Blog Event 20 Budget Meal Closing date 27 March 11

Recently while chatting with some facebook and twitter friends about the TV program known as "3 Plus 1 Sr 3(三菜一汤)" showing on every Wednesday, 8.00pm on Channel 8. I realise that the few of us usually have the habit of preparing homecooked dishes either by our own self, parents or helper at home. Especially now when the food pricing is rather high compare to a few years back, I am sure most of the family would rather prepared some simple homecooked food than eat out most of the days.

So here I would like to urge those who loves to prepare simple homecooked meal to join us in this small event in order to accumulated more cooking ideas as well as sharing with each other on how to purchase ingredients with a minimum sum of budget given.




WHO CAN JOIN:
~ Anyone who is interested to help and share more ideas in preparing homecooked meal.


CRITERIA:
~ Prepare any "2 Dishes plus 1 Soup" or "1 Pot Dish" using a Maximum budget of S$20.00. If you are from overseas, you can also particpiate by converting to the appropriate currency value, (ie. US$15.00, RM$50.00, Rp $138,000 and etc)

~ Send in either your blog link with a post of all the prepared dishes plus soup together with at least 1 recipe on the prepared meal.

Or

~ If you do not have a blog, just send in the photos and recipe of your dishes and I will publish on your behalf in my blog, credited to you. (photos can be taken in any form using digital camera or handphone)

For example if you wish to cook some delicious and nutritious herbal soup but you do not have those necessary Chinese Herbs in your pantry. Here is what you can do with any purchase of pre-packed herbal soup ingredients from any local supermarket. I bought this FairPrice(Pasar) herbs for S$4.50 + 2 Chicken drumstick for S$3.20 so total I spent S$7.70 for this pot of Chicken Herbal Soup. In this case I will have S$12.30 balance to get ingredients for another 2 dishes.

  With this pre-packed herbs, follow the instructions at the back of the packet and you will have a pot of delicious soup in a few hours time. Before this, perhaps you would like to take notes on a few items when preparing the soup.


SOME PREPARATION NOTES


~ Always rinse the herbs with either running water or warm water in a bowl to watch away any dirt in it.

~ Depend on your preference, get ready either chicken bones, chicken drumsticks, pork ribs or pork fillet. Trim, rinse and blanched them in boiling water for about 5 minutes, rinse well before use.

~ You can use a auto-timer and cook the soup in slower cooker even if you are out of your house so that the soup will be ready during meal time.

20 Budget Meal Five Nuts Soup and Steamed Dumplings with Assorted Vegetables

Quick and Easy meal that comes with good and healthy combination of meat and vegetables are always something that busy working adults or parents look for. Here we have a fusion of Asian Steamed Dumpling with array of colourful vegetables such as Pumpkin, Carrots, Peas and Broccoli that will definitely cheers up your Monday Blue evening. These two sets of Steamed Dumpling and Five Nuts Soup meal only cost about S$12.20 which can serves around 2 - 3 persons.

To make a complete meal, I have boiled some five Nuts Soup that consists of 5 different colours of ingredients such as Fresh Fox Nuts, Lotus Seeds, Chinese Barley, Wolfberries and etc. This is a great nutty flavour soup which helps to calm nerves, strengthen Qi and nourish the body. The fresh fox nut can also helps to heal indigestion, diarrhoea and poor bladder control too.

FIVE NUTS SOUP

Ingredients: (serves 2 - 4)
300g Pork Ribs (排骨)
1 Packet of Fresh Foxnuts(茨实)
20g Chinese Barley (中国薏米)
20g Lotus Seeds (莲子)
10g Wolfberries (枸杞子)
5 Big Red Dates (红枣)
1.8 Litres of Water



Method:-
1. Blanched Pork Ribs in boiling water for 2 - 3 minutes, remove and rinse with tap water. Set aside.

2. Soak lotus seeds (unwashed) in a bowl of warm water for about 5 minutes. Remove the green pith in it to avoid bitterness. Rinse and set aside.

3. Rinse Chinese barley 2 - 3 times in a big bowl, remove any decay seeds and dirt.

4. Bring 1.8 litres of water to boil in a soup pot. Add in all the ingredients except wolfberries and when the mixture comes to boil again, lower the heat and simmer for about 30 minutes till lotus seeds and barley are soften.

5. Add in wolfberries and season with salt to taste according to own preference.


Total cost for this dish is about S$6.00 with breakdown shown below:-
Cost of Ingredients:
~ Pork Ribs = S$3.00
~ Fresh Foxnuts = S$1.50
~ Lotus Seeds, Red Dates, Wolfberries, Barley = S$1.50


Making of these dumplings can be hassle free by using the “Gyoza Mold(shown below)” which comes in handy by just placing a gyoza or wonton wrapper on top of the press (mold), add in fillings, close and press tight to form a perfect sealed gyoza or dumpling.

STEAMED DUMPLINGS WITH ASSORTED VEGETABLES

Ingredients: (serves 2, makes 12 dumplings)
125g Broccoli, cut into florets
70g Snow Peas, trimmed
120g Butternut Pumpkin, cut into 1" cubes
Half Medium Size Carrot, cut into 0.5" thick sticks
12 Round Wonton Wrappers
3 - 4 leaves of iceberg lettuce, optional

Dumplings:
150g Minced Pork
100g Medium Prawns, shelled, removed vein and cut into chunks
4 Water chestnuts, chopped
1/2 Teaspoon ginger juice
1/2 Teaspoon Cooking Wine
1 Teaspoon Sesame Oil
1 Teaspoon Cornflour
1/2 Tablespoon Light Soy Sauce
Dash of Ground Pepper
Some Chopped Spring Onion

*Note:-
~ You can replace Wonton Wrapper with Gyoza Wrapper too.


Method:-
1. Mix all the dumpling ingredients in a bowl, stir till well combine and set aside marinate in the refrigerate for at least 20 minutes.

2. Place a piece of dumpling wrapper on the dumpling(gyoza) mold, scoop 1/2 tablespoon of the mince mixture on the wrapper and fold and press the edge of the mold to enclose the fillings. Repeat with the remaining mince mixture.

3. Line two bamboo steamers with iceberg lettuce/baking paper. Divide broccoli, carrot and pumpkin and wrapped dumplings equally into each steamer, drizzle with some sesame/olive oil.

4. Stack the steamers, covered and place it into a big steamer pot or over a pan of simmering water.

5. Steam for 3 minutes on medium high heat, swap the bottom layer of the steamer with the top and continue to steam for another 2 minutes before adding in the snow peas and steam for another 1 minute or till tender.

6. When done, remove from heat. Drizzle evenly with 1/2 tablespoon of soy sauce mixture (50ml hot water, 1/2 teaspoon light soy sauce and dash of sesame oil) and serve immediately with steamed rice or on its own.
