Pan Seared Scallops and Leek Risotto and Blackberry Vinaigrette

Scallops and Leek Risotto

Now that spring is in full swing, Steven and I reenrolled in our CSA program from last year. It was definitely a good decision because our first box had lots of goodies, including sugar snap peas, my all-time favorite vegetable, leek, strawberries, and salad mix just to name a few. Since the quarter just started, I dont have to study 24/7 just yet, or at least I dont think I have to study... Of course I could be very delusional and falling behind as we speak. But while Im still procrastinating, at least I have time to make a nice meal. And when it comes to risotto, you need plenty of time.

Back in the good old days of only working part time, I had the time and patience to pull up a chair next to the stove and just sit there stirring absentmindedly. But nowadays life is way more frenetic and I have to be multitasking at least three things or I feel unproductive, which means I no longer tend so diligently to the risotto. I know youre technically supposed to stir risotto for the entire cooking time, but luckily I discovered, its not the end of the world if you do stop. I know Marcella Hazan would be very disappointed but honestly, who has the time to sit around and stir a pot of rice for 30 minutes. While the risotto was cooking, I: put away the dishes, stirred, washed the dishes, stirred, cleaned the kitchen, stirred, made the dressing, stirred, cooked the scallops, yeah you get the idea. The risotto was maybe slightly less creamy but I couldnt tell. (From watching all those seasons of Top Chef, I just know that its cheating to add cream to risotto, downright culinary sin!) And after you add the cheese and butter its all good to me.

I would normally welcome leftovers, but risotto is something that just doesnt reheat well, so I scaled the recipe down for two, but feel free to double it for 4.
Leek and Bacon Risotto
*note: omit the bacon for a vegetarian version

2 slices regular thickness bacon or 1 slice thick cut bacon *omit and replace with 1 Tbsp of vegetable oil for vegetarian
1 leek, white and light green part only thinly sliced and washed
1 C arborio or carnaroli rice (do not rinse!)
1/4 C dry white wine
2 1/2 - 3 C homemade chicken stock
1/4 C freshly grated Parmesan
Freshly ground black pepper to taste
Salt to taste
1 Tbsp butter

In a small saucepan, bring the stock to a low simmer and keep it warm.

In a large heavy bottomed saucepan or Dutch oven, cook the bacon over medium low heat until crisp and the fat has rendered. Turn up the heat to medium and add the leeks and a pinch of salt. Cook until the leeks have softened. Add the rice and cook the rice until the rice is evenly coated in the fat and toasty. You will be able to see an outer opaque ring around a white center on the rice grains.

Add the white wine and cook until it has absorbed. Reduce the heat to medium low and add a half cup of the chicken stock and freshly ground black pepper to taste. At a low simmer, cook the rice, while stirring continuously, until all of the stock has been absorbed. Add another half cup of stock and stir continuously. Repeat adding the stock and stirring continuously until the rice is al dente. You may not need all of the stock, or if you find yourself running low on stock, use some hot water. Start tasting the rice after 20 minutes of cooking. It should be tender with a slight firm bite in the center. When the risotto is finished cooking, take it off heat. It will be creamy, moist, and somewhat runny but it will thicken after adding the cheese and while it cools.

Off heat, stir in the Parmesan and butter and taste for salt.


Seared Scallop
Made these for Valentines Day. Theyre perfect on this risotto.
Pan Seared Scallops
3 - 6 Scallops per person
Salt and Pepper
Oil

Keep the scallops in between two sheets of paper towels before you cook them. This will help absorb any moisture from the scallops. Season the scallops on both sides with salt and pepper.

Heat a stainless steel or well-seasoned cast iron skillet over medium high heat and add a tablespoon of vegetable or canola oil.

When the pan is hot, add the scallops, giving them about 1 - 2 inches of room in between each other. Cook them undisturbed for 2 minutes then using a spatula, gently flip the scallops to the second side, cook for another 1 minute or until the second side is nicely browned also. Take off heat and serve with your favorite side.



Blackberry Vinaigrette

For the salad mix in our CSA box, I made a blackberry vinaigrette with the blackberries I painstakingly picked last summer. I still have about a gallon of frozen blackberries and I better hurry up and use them before they start tasting like freezer. Wouldnt that be a waste! I mean, my sweat and blood went into picking those blackberries! This is a great summery, fruity dressing that really relies on fresh berry flavor.

Blackberry Vinaigrette
3 Tbsp fresh blackberry puree
fresh lemon juice (to taste)
1 Tbsp Dijon mustard
3 Tbsp extra virgin olive oil (to taste)
Salt and freshly ground pepper

If your blackberries are very ripe, sweet, and potent, you can get away using just two tablespoons of puree and add some lemon juice for tartness. My blackberries were not picked at their absolute ripest so they were still on the slightly tart side and I didnt need to add any lemon juice at all. Dont add any acid in the the beginning and just taste as you go.

Whisk the blackberry puree and Dijon together to mix, slowly whisk in some extra virgin olive oil until you get the consistency you like. Add lemon juice for additional tartness. Season with some salt and pepper.

Pan Fried Ribs with Rosemary 迷迭香煎排骨





This is one of the earlier dishes I did using the Happy Call Pan (HCP). Again, this was hidden away in the draft folder till now. :P  Ages catching up. Ill be 41 on my coming birthday. :o Memory is failing. :p



I havent been using my HCP much lately. Just too lazy. I have been letting the oven do most of the work. Perhaps I should use the HCP to make this dish again.



If remembered correctly, the ribs done with the HCP was rather juicy as compared to using the oven. However, I usually oven grill the ribs with the onions. It adds the sweetness of the onions to the ribs. Im unable to do so with the HCP as it will burn the onion. The onions here is served as a side. Please omit it if you dont like it. I love onions though. ;)




Ingredients:


  • 2 Pork Ribs

  • 1 teaspoon Minced Garlic

  • 1 sprig Fresh Rosemary or 1/2 teaspoon Dried Rosemary

  • 1/2 Onion, sliced

  • Salt and Pepper to taste




Marinade:


  • 2 teaspoon Cooking Wine

  • 1/2 teaspoon Light Soy Sauce

  • 1 teaspoon Minced Garlic

  • a pinch of Salt

  • a dash of Pepper




How to do it:


  1. Add ribs to marinade.

  2. Set aside and let it marinate for 20 mins.

  3. In the pan, heat 1 tablespoon oil.

  4. Add in onions and half of minced garlic.

  5. Saute fragant and onions are soften.

  6. Season with salt and pepper.

  7. Side aside.

  8. Using the same pan, place the ribs and sprinkle rosemary over.

  9. Covered the pan and cook for 2 mins on each side on medium low heat till just done.

  10. To have the ribs more charred and brown, turn up the heat a little and pan fried each side well, uncovered.

  11. Remove and serve with onions.






Note:


  • Time required to cook the ribs depends on how thick/meaty the ribs are.

  • You can use any cooking wine you like.

Pan Fried Fish Tofu 香煎鱼肉豆腐





I have been making this Fish Tofu for a few years. In the beginning, it was to incorporate vegetables to food that my veggie hater son likes to eat.



4 years passed and Im still making this but it never fail to make my son to eat more even its stuffed with chopped veggies. Yes, he still hates veggies. :/




Ingredients:


  • 150g Fish Paste

  • 1 tube Egg Tofu

  • 2 stalk Baby Bok Choy, chopped

  • 2 Crabstick, chopped

  • a dash of Pepper (optional)




How to do it:


  1. Cut the tip of egg tofu and squeeze tofu out to a bowl.

  2. Add in fish paste, chopped baby bok choy and crabstick.

  3. Add pepper and mix well.

  4. Take a deep dish, oil all sides well for easy removable.

  5. Spread fish tofu paste.

  6. Cover with foil.

  7. Steam for 15 minutes or till cooked.

  8. Removed and cut into pieces.

  9. Pan fried the steamed fish tofu with a little till slightly brown on all sides.

  10. Serve.




Note:


  • You can use other type of vegetables if you like.

  • If you want it with a crispy outer skin, dust it with corn flour before pan frying the fish tofu.

  • I used the Happy Call Pan to pan fry the fish tofu.

  • I placed the tofu cubes on the sides of the pan so I can pan fry 2 -3 sides at the same time.

  • Cover the pan and pan fry for a minute each time over medium low heat.

Pan Grilled Terikayi Shitake Mushroom


A quick post to let you know Im still kicking, though barely alive.

I had been busy for the past week with the kids stuff, making and preparing gifts for their teachers and friends before the end of school. Both my kids are going to new schools next year. So it was a farewell kind of thing for them.

School holidays has only just started this week and it feels like it has been weeks already. My kids are driving me up the wall. I feel so drained out everyday. Before the holidays, I still had my 2 hours break after I send the kids to school. Now, my break time is when the kids are in bed at night but by then Ill be busy trying to clear my housework. I desperately need to clone myself. Any scientist out there? :P

Okay, enough of my rants.

This idea that Im sharing is really easy and simple. We use to do this for our BBQ but using commercially bought sauce. Here, I had use the sauce left from making the Teriyaki Chicken for my sons lunch box.

I generously basted the Shitake Mushroom with the sauce before setting them on the grilling pan. I sprayed the pan with butter first. You could use normal butter or just cooking oil.

Grill each side for 1 to 2 minutes depending on the size of the mushroom. Baste the mushroom with more sauce if you like before turning them over for grilling.

As the sauce contains sugar, be careful not to turn the heat to high and burn the mushroom. Medium heat should be enough.

Crispy Pork Cutlets with Creamy Jalapeno Green Onion Gravy – Say Auf Wiedersehen to the 3 Pan Breading Station!

This is what happens when you have two food wishes in your head at the same time. I’ve wanted to do a schnitzel video für immer, but thanks to another recent food wish, I was also craving biscuits with cream gravy. So, I sort of did both, and it worked out well. Very well.

The crispy pork cutlet part of the presentation is very simple and straightforward, but it did afford the opportunity to share my new breading system. With all the time you’ll save, you can hit the gym to burn off this less than light, but extremely satisfying meal.

I’ve never been a big fan of the 3-pan breading system. Once you dredge meat in the prescribed dish of seasoned flour, you have to toss the rest. The whole idea is to simply coat the meat with flour, so why not just sprinkle on already seasoned meat? We use much less flour that way, and with zero waste.

From there, we’re not dipping these in a bowl of beaten eggs. Why do that, when we can just dump one egg on to the same plate and toss to coat. Faster, easier, and one egg is plenty for four cutlets.

As far as the cream gravy goes, the jalapenos and green onion probably seem logical, but some may raise an eyebrow over the diced dill pickle. I’m not sure exactly why I added them, but I just had one of those feelings. Pickles and pork, dill and cream sauce, it felt right, and it tasted even righter.

By the way, you can substitute veal, beef, turkey or chicken for the pork without missing a beat. Anyway, I hope you give this easy pork cutlet, delicious cream gravy, and/or new breading system a try soon. Enjoy!


Ingredients for 8 Cutlets (makes four entrée size portions of 2 cutlets each):

2 fully trimmed pork tenderloins, cut into 8 pieces, pounded flat
salt and pepper to taste
flour as needed
2 eggs
about 3 cups panko breadcrumbs
For the gravy:
2 tbsp melted butter
1/3 cup diced dill pickles
1 or 2 jalapeños, small dice
1 bunch green onions, chopped
salt and cayenne to taste
1 1/2 tablespoon flour
1 1/2 cup cold milk, plus more to adjust thickness if needed

Zespri Kiwifruit Recipes Kiwi Lime Mint Cooler Avocado with Gold Kiwifruit Salsa and Pan fry Salmon with Green Kiwifruit

Using fresh fruits in either Cooking/Baking is always something that interests me. As you can search through my recipes list, I have tired many dishes with fresh fruit like mango, apple, orange, avocado and etc. And this “Kiwifruit” feast featured here was inspired by the ZESPRI Kiwifruit tasting event held at Heart Bistro which I have missed out last week.

With the goodwill of the folks from Edelman(ZESPRIs PR), they have sent me a set of their press kit which includes fresh kiwifruit, kiwifruit recipes, cute kiwifruit 2GB thumb drive and etc. Below are 3 recipes using fresh ZESPRI Kiwifruit which I would like to share with you and hopefully it would inspired you to in-cooperate some kiwifruit in your daily dishes too.

In Singapore you can easily get a pack of these yummy ZESPRI Kiwifruit from any leading supermarkets or fruit stalls. And do you know ZESPRI Kiwifruit are the most "nutrient dense" of popular fruits that belong in the "Super Fruits" category. Each bite contains more essential nutrients than the other 27 most popular fruits.

ZESPRI Kiwifruit also contains more than 210% of the recommended daily intakes of Vitamin C which gives you 2 times more Vitamin C than an orange. KIWI, LIME AND MINT COOLER


If resources is possible do use fresh Green or Gold kiwifruit in your drinks if you are preparing kiwifruit juice or puree to get the full goodness out of them. Here to start off, lets have a glass of freshly blended "Kiwi, Lime and Mint Cooler" to refresh your body after a hectic day at work. And by adding mint leaves it also act as a fresh and aromatic flavor to the drink with a cool aftertaste.


(serves: 2 | Preparation: 10 minutes

Ingredients:
2 ZESPRI Gold Kiwifruit, cut into halves
2 ZESPRI Green Kiwifruit, cut into halves
1 Teaspoon of Honey
15ml, Juice of Half Lime
1/4 Cup Mint Leaves
1/2 Cup Ice Cubes, optional
150ml Chilled Sprinkling Water/Sprite/Wine

Method:-
1. Blend kiwifruit with honey, lime juice, mint leaves and ice cubes till combined. (I prefer mine without ice so usually i will used chilled sprinkling water/sprite)

2. Divide into cups and top with chilled sparking water and serve.



AVOCADO WITH GOLD KIWIFRUIT SALSA


For starter lets have some crunch to go with the cooler. Does this "Avocado with Gold Kiwifruit Salsa serve on Corn Chips" sound good to you? It is a refreshing dish with hint of sweet, sour and spicy taste due to the adding of lime juice and chopped chilli. This definitely serves well as a party food or tapas to go with cocktail or beer.


Recipe adapted and modify from ZESPRI, Singapore website HERE.
(serves: 2-3 | Preparation: 10 minutes)

Ingredients:
2 Ripe ZESPRI Gold Kiwifruit, cubes
1 Ripe Avocado, cubes
1/2 Tablespoon Runny Honey
Juice of 1/2 Lime
1 Red Chilli, seed removed and chopped
1 Tablespoon Shredded Basil/Mint Leaves

Method:-
1. Mix honey, lime juice, chilies and herbs in a bowl.

2. Stir in kiwifruit and avocado cubes and marinate for about 15 - 30 minutes.

3. Upon serving, spoon mixture on corn chips and serve it as starter or pairing with wine and beer too.

You can also serve this salsa on its own by the side of the main course or mix it together with some shredded chicken and salad greens and serve as a quick salad too. No matter which is your preference style I am sure this appetizing salsa will make your meal taste great.



PAN-FRY SALMON WITH GREEN KIWIFRUIT


Salmon has earned its research reputation as a health-supportive food based on its amount of omega-3 fatty acid content. Here we are using two nutritious ingredients to form a main course which is so easy to prepare and yet so healthy for the whole family.


Recipe adapted and modify from ZESPRI, Kiwifruit Recipes booklet
(serves: 2 | Preparation: 15 minutes | Cooking: 6 - 8 minutes)

Ingredients:
2 - 3 ZESPRI Green Kiwifruit
1 Small Chilli, seeded and diced
1 Teaspoon Maple Syrup/Honey
450g Salmon Fillet, halves
1 Tablespoon Apple Cider Vinegar
1 Tablespoon Olive Oil
2 Servings of your desire Salad Greens

Dressing:
2 Tablespoons Olive Oil
1 Teaspoon Honey
2 Tablespoon Apple Cider Vinegar
Freshly Ground Black Pepper to Taste

Method:-
1. Place salmon in a deep bowl together with chili, vinegar and honey. Marinate for at least 15 - 30 minutes.

2. Meanwhile, peel and slice the ZESPRI Green Kiwifruit in wedges.

3. Heat the oil in a non-stick pan and saute the drained salmon for 3 minutes or until just cooked (according to your own preference).

4. To assemble, pile the salad greens in individual serving plates, top with kiwifruit and salmon.

5. Combine the ingredients for the dressing and drizzle over the salad. Garnish with extra black peeper if desired.

Dont back off from this dish if you are worry about the "smell" of the salmon fish as the marinade from the chopped chilli and apple cider vinegar actually has mask it quite well to flavour this dish. And furthermore to ease your cooking chore, you can even place the salmon on a grease disposal foil tray and bake in the toaster oven for about 8 minutes(turning once) depending on your preference for cooking the salmon.

Simple yet decadent fish supper pan fried vendace

Praetud rääbised / Pan-fried whitefish and tomato salad

Vendace is a wonderful freshwater whitefish that youll find all over the northern continental Europe. The Latin name is Coregonus albula, and although it looks quite similar to the Estonian "national fish" Baltic Herring (räim aka Clupea harengus membras) that belongs to the herring family, then vendace is actually part of the salmonidae family alongside salmon, char, trout, graylings and other freshwater whitefishes.Youre most likely to come across vendace (also called European cisco) in the lakes of Finland, Sweden, Russia and Estonia, as well as some lakes in the UK, Poland and Northern Germany. When I say the lakes of Estonia, I mean Lake Peipus - and must sadly admit that vendace has been scarce in the local waters during the last years.

Imagine my excitement when I saw beautifully fresh vendace at the local farmers market yesterday morning! I immediately bought some hot-smoked vendace for lunch, and almost a kilogram of fresh vendace for dinner. Its such a delicate and excellent fish that doesnt need much messing around. A quick bath in a seasoned rye flour, followed by frying in hot butter or oil - youll find the "recipe" below. I served the fried vendace with a fresh tomato salad, and the meal was enjoyed by all, including the small kids.

A note on vendace roe. The dark orange-coloured vendace roe (rääbisemari/löjrom) is a true delicacy, and Kalix löjrom from  the Swedish Botnia Bay archipelago has even been granted a PDO (protected designation of origin) status by the European Union, just like Prosciutto ham from Tuscany or Parmigiano-Reggiano cheese from Lombardy and Emilia-Romagna. When the rather excellent roe of common/European whitefish (Coregonus lavaretus) cost 799 SEK (Swedish crowns) in a supermarket in Stockholm back in early June, then the vendace roe was almost double the price, 1490 SEK:

Pan-fried vendace

Praetud rääbised / Pan-fried whitefish

fresh vendace (calculate about 2-3 fish per person)
rye flour or oatmeal
salt
freshly ground black pepper
fresh dill, finely chopped
oil and butter for frying

Season the flour with salt and pepper, then roll the fish in the flour until evenly covered. Heat some butter and oil (or just one or the other) in a heavy frying pan over medium heat. Add the fish and fry for a few minutes on one side until dark golden brown, then carefully turn over and fry the other side for a few minutes again.

Garnish with a sprinkling of dill and serve with boiled new potatoes or potato mash, and perhaps a dollop of good home-made mayonnaise (be sure to click on the link if you havent seen the cool Nami-Nami video recipe yet).
