5 Recipes Assorted Homemade Bread Part II

First of all, sorry for not being able to update more posts for the past few weeks as I was very busy with work, upcoming events as well as my boys school term examination. But despite of all those busy days, we also starts to enjoy making our daily Handmade Bread(Part I, HERE) which I would like to share with you some of the modified recipes that I have tried and tested.

When it comes to Handmade Bread, I think the most difficult part will be on the mixing and kneading of the dough. Personally I find it quite tedious to knead till the stretchable membrane stage which sometime takes about 20 - 30 minutes using hand instead of mixer or bread machines. But these hard work will payoff when your get to see your soft and fluffy bread that is well-received by the family. As for those who still cannot achieve that stretchable stage for your dough or having problem/unsuccessful Bread even though you follow all the steps to the dot, please do not give out. I am sure with more practice and proper guidance from those of your friends who had succeed, you too will be able to overcome the problem soon.


HOKKAIDO MILK LOAF

I still remember vividly, a few years ago this Hokkaido Milk Bread(北海道牛奶土司) is one of the popular bread recipes circulate among bakers and I first notice this recipe at Angies Recipes HERE which using a different method. And I have never thought after few years later, I would able to  try out this popular bread using Tangzhong(烫种) method.

Although we might not be able to get hold of Hokkaido Milk to make this milk bread but definitely with any brand of full-cream fresh milk that we have in the local supermarket we can also bake  a similar milk bread/bun that is soft, fluffy and fragrant to taste. And if you love anything with "milk" taste, this is sure to be a "MUST TRY" recipe for you.

Ingredients: (makes 2 loaf of bread, 17cm x 8cm x 6cm)
220g Bread Flour
50g Extra Bread Flour, set aside for kneading
50g Caster Sugar
3g Salt
1 Tablespoon Milk Powder
5g Instant Yeast
92g Tangzhong(烫种)
30ml Beaten Egg
50ml Whipping Cream
30ml Fresh Milk
25g Unsalted Butter, soften

Toppings:
1 Tablespoon Dried Cranberry And Raisin Mixture
1/2 Tablespoon Mini Chocolate Chips
1 Laughing Cow Cheese Wedge

Method:-
1. Combine all dry ingredients such as flour, milk powder, salt, sugar and instant yeast in a bowl and mixed well.

2. Make a well in the center stir in wet ingredients such tangzhong, beaten egg and soft butter then follow by milk till it form a sticky dough.

3. Next turn the sticky dough out on to lightly floured surface. Stretch the dough by pushing the front half away with one hand, knead and constantly dust with the extra bread flour that is set aside.

4. Fold the stretched part of the dough back on itself, give it a quarter turn and repeat for 15 - 20 minutes, until the dough has been turned full circle several times and is a smooth and elastic ball. (Knead until stretchable and pass the window panel consistency)

5. Place the kneaded dough back into the lightly floured mixing bowl and leave it in a warm place to prove for about 45 minutes to an hour or until the dough has doubled in size.

6. Test your proofed dough by pushing your floured finger deep into the risen dough whereby it will leave an indentation that does not spring back.

7. Punch the risen dough with your fist to deflate it, re-shape the dough into oblong shape and divide it into 4 equal portion and let it rest for 10 minutes.

8. Roll out each portion of the dough with a rolling pin into an oval shape. Fold 1/3 from right and left edge to the middle and press down. Turn seal downward.

9. Roll flat and stretch to about 15 - 20cm in length, scatter with desire toppings and with roll from the top far end towards you. With seal facing down place in the loaf tins and repeat the same procedure to the next 3 portions.

10. Prove doughs for another 45 minutes or at least double the original size. Brush dough with egg wash and bake in pre-heated 175 oven for about 20 - 25 minutes depending on the size of the loaf/bun.

11. Remove loaf IMMEDIATELY from the pan and leave to cool for at least 30 minutes before slicing.



BAMBOO CHARCOAL AND MILK LOAF

Get this idea from a bread post that I saw from Cathys Joy website on her "Moo Moo Bread". Initally I was thinking about making something similar to hers but since we are using a totally different recipes, I ended up having a checker design rather than moo moo. This is the 1st time I am using 2 coloured dough and I think I have sort of over knead it as the texture seems to be a bit dry after a few hours later. But overall it still taste good with that extra dose of almond flakes on top.

Ingredients: (makes 1 loaf)
135g Bread Flour
*40g Extra Bread Flour, set aside for kneading
5g Milk Powder
3g Instant Dry Yeast
30g Sugar
1/8 Teaspoon Salt
30ml Beaten Egg
60g Tangzhong(烫种)
60ml Fresh Milk
15g Unsalted Butter, soften

Colour Dough:
3/4 Teaspoon Bamboo Charcoal Powder

Toppings:
Egg Wash
Almond Flakes

Method:-
1. Refer Steps 1 to 4 of the Hokkaido Milk Loaf recipe above.

2. Divide dough(about 400)into 2 portions weighing, 200g each separately.

3. Slowly knead Bamboo Charcoal Powder into 1 portion of the dough (200g) for a few minutes till colour is even.

4. Place both the kneaded doughs into two lightly floured mixing bowl and leave it in a warm place to prove for about 45 minutes to an hour or until the dough has doubled in size.

5. Test your proofed dough by pushing your floured finger deep into the risen dough whereby it will leave an indentation that does not spring back.

6. Punch the risen doughs with your fist to deflate it, re-shape the two doughs into oblong shape and cut each dough into 5 equal portion and let it rest for 10 minutes.

8. Roll each individual portion of the doughs into an oval shape about 10cm x 5cm, roll the flatten dough towards your direction starting from top down. Further divide the rolled dough into half and set aside. Repeat the same process for the remaining doughs.

9. Arrange the cut doughs(10 plain doughs and 10 black doughs) into a grease loaf tin in alternate colours of two layers. Prove the loaf for about 45 minutes or double its size.

10. Brush dough with egg wash, scatter some almond flakes and bake in pre-heated 175 oven for about 20 minutes. Remove loaf IMMEDIATELY from the pan and leave to cool for at least 30 minutes.



PUMPKIN CINNAMON BUN



Since I have some left over pumpkin in the fridge from making pumpkin soup. I decided to try out this Pumpkin Cinnamon Bun from one of the Chinese website known as "袅袅烘焙香". Since we are using a different cooked dough recipe, I have changed a bit on the original recipe which I replaced her "scalded-dough" to water roux method and cold water to cold milk.

Indeed this is a very sticky dough to knead till smooth and elastic as we have added to 3 liquid items such as water roux, mashed pumpkin and cold milk. I think out of the doughs that I have kneaded so far, this is the most difficult dough to knead as it took me about 30 minutes or more. And sad to say the final result is not very good, from the step-by-step photos below you will notice that the 2nd proofed dough seems to sink after the egg wash and the surface texture became crumpled too.

Recipe adapted from 茄子, 袅袅烘焙香, Pumpkin Bread HERE.

Ingredients: (makes 6 buns)
170g Bread Flour
30g Extra Bread Flour, set aside for kneading
30g Caster Sugar
1/8 Teaspoon Cinnamon Powder
1 Tablespoon Milk Powder
4g (1 Teaspoon) Instant Yeast
65g Tangzhong(烫种)
60g Mashed Pumpkin
75ml Cold Milk
30g Butter, soften

Topping:
Sesame Seeds, optional

Method:-
1. Combine all dry ingredients such as flour, milk powder, sugar and instant yeast in a bowl and mixed well.

2. Make a well in the center stir in wet ingredients such tangzhong, mashed pumpkin and cold milk till it form a sticky dough before mixing in the soft butter till well combined.

3. Next turn the sticky dough out on to lightly floured surface. Stretch the dough by pushing the front half away with one hand, knead and constantly dust with the extra bread flour that is set aside.

4. Fold the stretched part of the dough back on itself, give it a quarter turn and repeat for 15 - 20 minutes, until the dough has been turned full circle several times and is a smooth and elastic ball. (Knead until stretchable and pass the window panel consistency)

9. Prove prepared buns for about 45 minutes or double its size. Brush dough with egg wash and bake in pre-heated 175 oven for about 20 minutes.

10. Remove loaf IMMEDIATELY from the pan and leave to cool for at least 30 minutes.



PANDA BREAD



Finally gets to lay my hand in trying out this cute Panda Bread which I adore very much.The original recipes from the internet called for 3 different coloured dough to distinguish between the face, features and background. But here using my reliable "Milk Bread" recipe which we love, I only used black and plain dough for this design. 

But as you can see from the photos below I didnt quite get the wrapping steps correct which cause my Panda Bread to be out of shapes for its ears and eyes.

Recipe adapted from Not Quite Nigella, HERE.

Ingredients: (makes 1 loaf, 20cm x 10cm x10cm high)
220g Bread Flour
*50g Extra Bread Flour, set aside for kneading
50g Caster Sugar
3g Salt
1 Tablespoon Milk Powder
5g Instant Yeast
92g Tangzhong(烫种)
30ml Beaten Egg
50ml Whipping Cream
30ml Fresh Milk
25g Unsalted Butter, soften

Colour Dough:
100g Knead Dough
1/2 Teaspoon Bamboo Charcoal Powder

Method:-
1. Refer Steps 1 to 4 of the Hokkaido Milk Loaf recipe above.

2. Divide dough(about 540g)into 2 portions weighing, 100g and 440g separately.

3. Knead 1/2 Teaspoon of Bamboo Charcoal Powder into the 100g of dough for a few minutes till colour is even.

4. Place both the kneaded doughs into two lightly floured mixing bowl and leave it in a warm place to prove for about 45 minutes to an hour or until the dough has doubled in size.

5. Punch air out of dough and prove for another 10 - 15 minutes.

6. 1st Layer: Use 90g plain dough for the face and 2 pieces of 30g bamboo charcoal dough for the eyes and fill the hollow of the eyes with 30g plain dough. (refer to the photo above)

7. Roll another 100g of plain dough over the 1st layer of patterned dough.

8. 2nd Layer: Divide the remaining bamboo charcoal dough into 2 pieces (20g each) for the ears and place another 70g of plain dough to fill up the hollow between the ears. (refer to the photo above, last row)

9. Wrap the rest of the plain dough all around the patterned dough, place dough into a well-greased loaf pan and cover it with a lid and prove for 50 – 60 minutes or till double its size.

10. Brush dough with egg wash and bake in pre-heated 175 degree oven for about 20 - 25 minutes. Remove loaf IMMEDIATELY from the pan and leave to cool for at least 30 minutes before cutting.



WHOLEMEAL CRANBERRY WITH MULTI-GRAIN LOAF



I love Wholemeal Bun/Bread with either assorted nuts, dried fruits or multi-grain toppings. So making this wholemeal loaf is something which I look forward to at least once or twice a week. Before attempting this recipe, I have read a few posts mentioning that wholemeal dough is rather more tricky to handle by hand compared to plain dough. So after much hesitation, I finally get myself ready to make my favourite Wholemeal Cranberry With Multi-Grain Loaf.

Although the dough was rather sticky but thank God I already have some experience in kneading the pumpkin dough so I was rather mentally prepared to knead longer for this. To my surprised the dough became more and more manageable after about 15 minutes or kneading and finally it works out after almost 30 minutes of turning, folding, stretching and turning. And I am glad  that I have made the decision to try out this bread as it is so light, fluffy and delicious with those dried fruits and multi-grains hidden in between the layer of the wholemeal loaf with a slight crisp outer crust. MUST TRY!

Ingredients: (makes 1 loaf of bread, cm x 8cm x 6cm)
110g Bread Flour
*30g Extra Bread Flour, set aside for kneading
100g Wholemeal Flour
5g Instant Yeast
30g Caster Sugar
60g Tangzhong(烫种)
30ml Beaten Egg
70ml Fresh Milk
25g Unsalted Butter, soften

Toppings:-
60g Chopped Dried Cranberry And Raisin
1 Tablespoon Multi-grain Toppings

Method:-
1. Refer Steps 1 - 6 of the Pumpkin Cinnamon Loaf recipe above.(this wholemeal dough is very sticky compared to the rest, but just keep on knead and you will get the same smooth and elastic dough result)

2. Punch the risen dough with your fist to deflate it, re-shape the dough into oblong shape and divide it into 4 equal portion(about 115g each) and let it rest for 10 minutes.

3. Roll each portion of the doughs into an rectangle shape about 15cm x 5cm, scatter each dough with some chopped cranberry and raisin roll the flatten dough towards your direction starting from top down.

4. With the seal side facing up, flatten and into another rectangle then roll dough towards your direction starting from top down again. With seal side facig down, place dough in grease loaf tin for 2nd round of proofing (around 45 - 60 minutes) or until double in size.

5. Repeat steps 3 and 4 for the remaining 3 doughs.

6. Brush final dough with egg wash and scatter evenly with multi-grain and bake in pre-heated 180 degree oven for about 25 minutes.

7. Remove loaf IMMEDIATELY from the pan and leave to cool for at least 30 minutes before cutting.


Lastly I hope that you wont get bored with this 2nd "lengthy" post on bread making but instead this will strengthen/boost up your confident in making Homemade Bread for your family which you gets to control what you like for your ingredients to suit their taste buds.

With Recipes Lunar New Year Lunch Gathering With Relatives

This year mum and I decided to do a combined New Year lunch gathering to invite our relatives over for a festive lunch. We hope to take this opportunity to get touch and mingle with everyone since we seldom get a chance to eat together as a big group during normal days of the year.

As this was my first time cooking for 30 pax, I was pretty excited about the whole gathering and I also spent quite some time drafting the menu to cater for festive feel plus majority preference.  And thanks God, everything went on smooth with surplus of food and everyone has a wonderful family bonding time together too.

Gift For Our Neighbour
Beside the family gathering, every year we also prepared something as a token of appreciation for our neighbours. Being staying around my area for more than 10 years and we have two families of wonderful neighbours whom we always joke and chit chat whenever we see each other. And every year during Lunar New Year, Malay Hari Raya, Deepavali and Christmas season, we would exchange gifts and food together to soak in the festive atmosphere as well as appreciate each others culture and friendships.



FAMILY LUNCH GATHERING DURING
DAY 2 OF CHINESE LUNAR NEW YEAR


Above is my draft lunch menu which we also added a few last minute dishes in order to feed a group of 30 persons. And below are some foodporn of the dishes that we had during the lunch gathering.......


APPETIZER


{Appetizer} Spicy Top Shell
Since I dont really fancy top shell, I have limited ideas on how to create a dish using this. But mum on the other hand loves to use this as side dish (Chinese Salad) together with some onion, cucumber and spicy sauce. And to enhance the taste, mum also added in some small chilli (diced) and crashed roasted peanut which makes it taste similar to Thai-style salad.


(Preparation: 10 minutes)

Ingredients:
3 Cans of Top Shell
2 Japanese Cucumber, skin removed
6 Calamansi (酸柑), halved and juice
6 Shallot, thinly sliced
1 Small Chilli, chopped
2 Tablespoons of Thai Sweet Chilli Sauce, optional
Some Roasted Peanuts (optional), roughly chopped

Method:-
1. Rinse and drain the top shell, thinly sliced and set aside.

2. Cut the cucumber into halve, lengthwise then sliced 0.5cm thick diagonally.

3. In a mixing bowl, mix together top shell, cucumber, shallot, chilli, calamansi juice, chilli sauce and some freshly ground black pepper together.

4. Season the taste with more calamansi juice/chilli sauce, top it with some crashed peanuts before serving.


{Appetizer} Yogurt With Mixed Fruit Salad
For kids and those who dont like the Spicy Top Shell, I have prepared some Yogurt With Mixed Fruit Salad as alternative choice. This is a quick appetizer which you could easily whipped it up at home using assorted fruits of your choice like:- dragon fruit, apple, pear, avocado, orange, strawberry and etc. Mix the cut fruits with either flavoured yogurt or Greek yogurt for a thick and creamy texture. 


MAIN DISH


{Main} Mini Buddha Jumps Over The Wall
Buddha Jumps Over The Wall (佛跳牆) is made from numerous delicacies with more than 10 ingredients such as bamboo shoots, scallops, sea cucumber, abalone, shark fin, chicken, Jinhua ham, pork tendon, mushrooms and etc. These ingredients are then simmered over low heat for many hours with just the right amount of heat to achieve the irresistible taste of this traditional dish.

But on our end, instead of making this soup dish from scratch we shorten the cooking process by using ready bought "Buddha Jumps Over The Wall" soup broth. On top of it, we add in extra ingredients like abalone, sea cucumber, fish maw, scallops, chicken broth and etc to create our quick and easy Mini Buddha Jumps Over The Wall (迷你佛跳牆).

{Main} Longevity Noodles With Superior Broth
You might find this "noodle dish" familiar because I have shared the recipe in my previous post on the Chinese Cooking Demo by Chef Eric Low.  

For our version instead of using the traditional Longevity Noodles, we replaced it with Ee Fu Noodles and also add in Chinese Cabbage (Napa Cabbage) for extra sweetness.

{Main} Braised Pork Belly With Mushroom
To pair with the steamed white rice, mum specially prepared this pot of Braised Pork Belly With Mushrooms which is well received and gone within minutes too.

{Main} Stir-fry Sweet Peas with Leek And Carrot
A very "green veggie" dish that mum and I come up with using Sweet Peas, Celery, Chinese Leek, Mushrooms, Carrot, Wolfberries, Lily Buds and Chinese Preserved Sausage for extra seasoning flavour. Before serving, I also scattered some roasted cashew nuts on top for extra crunch too.  

{Main} Baked Honey Chicken With Rosemary
Instead of deep-fried chicken wings, I bought 2 kg of mid-joints to make 2 different recipes to cater for two groups of guests. First we had this Baked Honey Chicken With Rosemary which was savory and yet with hint of sweetness from the caramelized honey. Recipe can be found here

{Main} Korean Spicy Chicken Wings
Next for my cousins and aunties who are fans of Korean food and drama. I specially made this Korean Spicy Chicken Wings for them. Although mine were not as spicy and fiery as compared to those from Nene Chicken, but majority of them love my combi of using Gochujang paste, sesame seeds, grated ginger and etc which you could find my recipe here at one of my Korean Cooking Project post.

{Main} Hakka Style Rice Wine Chicken
Traditional Hakka Style Rice Wine Chicken (黄酒鸡 ) (my recipe) made by my mother-in-law who is a typical Hakka lady whom is good in culinary skill. She has a lot good traditional recipe on Hakka delicacy such as Abacus Seeds (recipe),  Steamed Pork Belly with Mui Choy (recipe), Soon Kueh and etc which I still learning and try to make it simple to share the recipes in my website with those who are keen in trying those dishes.

{Main} Homemade Assorted Mini Pizza
Everyone loves pizza especially those with lot of cheese and pipping hot ones that are just out from the oven. In order to speed the preparation and serve it hot, we used ready bought Pita Bread (thick crust) and Wholemeal Wraps (thin crust) from supermarket to use as the pizza base.

Its so fun creating our own pizza using ready bought pizza base (put in the fan-force oven for about 3 minutes till slightly crisp before use), pizza sauce (I used tomato base spaghetti sauce) , sausage, pineapples, capsicums, shredded mozzarella cheese, prawns, tomato, mayo tuna and etc as the toppings.
 
{Main} Assorted Finger Food
Party cannot do without fingers food like nuggets, chicken gyoza, fish balls, sotong balls, hotdog, sausages and etc as these are the all time favourite for both kids and adults.

{Dessert} Osmanthus And Chestnut Koi Jelly
I love dessert so for this New Year gathering, I made some Koi and Ingot Jelly using Konnyaku Jelly Powder plus Osmanthus Flower and Water Chestnut. You can read more on how to make this auspicious jelly at the recipe post here.

{Dessert} Longan And Cranberry Yogurt Cake
For cake I also made two different flavour to cater for the group of old and young. And since it was the 2nd day of Lunar New Year, I decided to bake my new inspiration which was the Longan And Cranberry Yougrt Cake. I really love this new flavour which is moist, fluffy and full of flavour from the dried longan, cranberry, cointreau and chia seeds. Give this a try if you love orange flavour cake with dried fruits in it.

{Dessert} Double Chocolate Yogurt Cake
Chocolate lover would love this because I use 70% dark chocolate plus chocolate chips and Valrhona Dutch Process Cocoa Powder to make this moist and rice chocolate cake. To enhance the texture of the cake, Greek yogurt and fresh orange juice were also added into it.


Ingredients: (makes 2 small loaf tins, 17cm x 8cm x 6cm)
175g Unsalted Butter, room temperature
200g Caster Sugar
3 Eggs, 60g each
200g Self Raising Flour
45g Valrhona Cocoa Powder
100g Mini Chocolate Chips
40ml Orange Juice
200g Greek Yogurt

{Dessert} Baked Cheesy Nian Gao With Prata
Apart from the cakes and jelly I also made this addicting snacks for the guests and they really enjoy it, especially for those kids who do not know how to appreciate "Nian Gao (年糕)" on its own. With this fusion method of wrapping traditional nian gao with shredded cheese using ready bought prata skin I am sure it would make a great snack for your visiting guests.

If you could not find prata skin, replace it with either puff pastry or spring roll wrapper (deep-fry the end product instead of bake) . But remember do not over-filled the wrapper with Nian Gao or else the parcel would burst during baking or cooking.  Related recipe could be found at my recipe link here.

Using fresh fruits in either Cooking/Baking is always something that interests me. As you can search through my recipes list, I have tired many dishes with fresh fruit like mango, apple, orange, avocado and etc. And this “Kiwifruit” feast featured here was inspired by the ZESPRI Kiwifruit tasting event held at Heart Bistro which I have missed out last week.

With the goodwill of the folks from Edelman(ZESPRIs PR), they have sent me a set of their press kit which includes fresh kiwifruit, kiwifruit recipes, cute kiwifruit 2GB thumb drive and etc. Below are 3 recipes using fresh ZESPRI Kiwifruit which I would like to share with you and hopefully it would inspired you to in-cooperate some kiwifruit in your daily dishes too.

In Singapore you can easily get a pack of these yummy ZESPRI Kiwifruit from any leading supermarkets or fruit stalls. And do you know ZESPRI Kiwifruit are the most "nutrient dense" of popular fruits that belong in the "Super Fruits" category. Each bite contains more essential nutrients than the other 27 most popular fruits.

KIWI, LIME AND MINT COOLER


If resources is possible do use fresh Green or Gold kiwifruit in your drinks if you are preparing kiwifruit juice or puree to get the full goodness out of them. Here to start off, lets have a glass of freshly blended "Kiwi, Lime and Mint Cooler" to refresh your body after a hectic day at work. And by adding mint leaves it also act as a fresh and aromatic flavor to the drink with a cool aftertaste.


(serves: 2 | Preparation: 10 minutes

Ingredients:
2 ZESPRI Gold Kiwifruit, cut into halves
2 ZESPRI Green Kiwifruit, cut into halves
1 Teaspoon of Honey
15ml, Juice of Half Lime
1/4 Cup Mint Leaves
1/2 Cup Ice Cubes, optional
150ml Chilled Sprinkling Water/Sprite/Wine

Method:-
1. Blend kiwifruit with honey, lime juice, mint leaves and ice cubes till combined. (I prefer mine without ice so usually i will used chilled sprinkling water/sprite)

2. Divide into cups and top with chilled sparking water and serve.



AVOCADO WITH GOLD KIWIFRUIT SALSA


For starter lets have some crunch to go with the cooler. Does this "Avocado with Gold Kiwifruit Salsa serve on Corn Chips" sound good to you? It is a refreshing dish with hint of sweet, sour and spicy taste due to the adding of lime juice and chopped chilli. This definitely serves well as a party food or tapas to go with cocktail or beer.

(serves: 2-3 | Preparation: 10 minutes)

Ingredients:
2 Ripe ZESPRI Gold Kiwifruit, cubes
1 Ripe Avocado, cubes
1/2 Tablespoon Runny Honey
Juice of 1/2 Lime
1 Red Chilli, seed removed and chopped
1 Tablespoon Shredded Basil/Mint Leaves

Method:-
1. Mix honey, lime juice, chilies and herbs in a bowl.

2. Stir in kiwifruit and avocado cubes and marinate for about 15 - 30 minutes.

3. Upon serving, spoon mixture on corn chips and serve it as starter or pairing with wine and beer too.

You can also serve this salsa on its own by the side of the main course or mix it together with some shredded chicken and salad greens and serve as a quick salad too. No matter which is your preference style I am sure this appetizing salsa will make your meal taste great.



PAN-FRY SALMON WITH GREEN KIWIFRUIT


Salmon has earned its research reputation as a health-supportive food based on its amount of omega-3 fatty acid content. Here we are using two nutritious ingredients to form a main course which is so easy to prepare and yet so healthy for the whole family.


Recipe adapted and modify from ZESPRI, Kiwifruit Recipes booklet
(serves: 2 | Preparation: 15 minutes | Cooking: 6 - 8 minutes)

Ingredients:
2 - 3 ZESPRI Green Kiwifruit
1 Small Chilli, seeded and diced
1 Teaspoon Maple Syrup/Honey
450g Salmon Fillet, halves
1 Tablespoon Apple Cider Vinegar
1 Tablespoon Olive Oil
2 Servings of your desire Salad Greens

Dressing:
2 Tablespoons Olive Oil
1 Teaspoon Honey
2 Tablespoon Apple Cider Vinegar
Freshly Ground Black Pepper to Taste

Method:-
1. Place salmon in a deep bowl together with chili, vinegar and honey. Marinate for at least 15 - 30 minutes.

2. Meanwhile, peel and slice the ZESPRI Green Kiwifruit in wedges.

3. Heat the oil in a non-stick pan and saute the drained salmon for 3 minutes or until just cooked (according to your own preference).

4. To assemble, pile the salad greens in individual serving plates, top with kiwifruit and salmon.

5. Combine the ingredients for the dressing and drizzle over the salad. Garnish with extra black peeper if desired.

Dont back off from this dish if you are worry about the "smell" of the salmon fish as the marinade from the chopped chilli and apple cider vinegar actually has mask it quite well to flavour this dish. And furthermore to ease your cooking chore, you can even place the salmon on a grease disposal foil tray and bake in the toaster oven for about 8 minutes(turning once) depending on your preference for cooking the salmon.
