Tiffanys Sour Cream Pancakes

Hi everyone! Im back! Thanks for all your well wishes! Im feeling much better now. Still slightly sore but I can chew more things now, thank God! I was going out of my mind eating eggs and pudding and mac and cheese every day.

This morning I decided to pull out a recipe for pancakes that was given to me years ago by my cousin Tiffany. I used the recipe once before and really liked it but I put it away and forgot about it since I dont get the chance to make breakfast that often. Well, let me tell you, I will definitely be making these again soon! They were so delicious and definitely worth the effort of making them from scratch. They arent the most figure friendly since they are loaded with butter but I instead of using whole milk I used skim plus. I had some reduced fat sour cream leftover and I had a new container of full fat sour cream so I used both. It turned out perfectly so I wouldnt worry about making swaps.


Pancakes

2 Cups all-purpose flour
½ cup sugar
2 tsp baking powder
1 tsp baking soda
½ tsp salt
1 ½ cups milk
1 cup sour cream
2 eggs
6 Tablespoons unsalted butter
1 Tablespoon Lemon Juice

Whisk together the flour, sugar, baking powder, baking soda and salt. In another bowl, whisk together the milk, sour cream, eggs, melted butter, lemon juice. Pour the milk mixture into the flour and stir until combined. Batter will be lumpy.

Brush griddle with olive oil over medium heat and make the pancakes like you normally would.

Makes approx 20 pancakes

A Perfect Time for Pumpkin Pancakes

A friend sent me a nice note recently that his wife had made these pumpkin pancakes for dinner, and that they were thoroughly enjoyed by all. I always appreciate those kinds of messages, especially since they often serve as a reminder for doing seasonally appropriate recipe re-posts.

This was the week pumpkin made its yearly appearance into my life. On restaurant menus, on television, in store windows, on neighbors’ steps, and all over our living room…and dining room…and kitchen…and, well, you get the idea. So, to celebrate the beloved American gourd, I decided to rerun this tasty winter treat. Enjoy!

Blueberry Pancakes

If you remember in early July this year, I have shared a post on 3 different Durian recipes (read more HERE) where one of it is making Durian Pancake. Here using a similar recipe I have whipped out some delicious Blueberry Pancakes for our weekend breakfast. And for those staying in Singapore, does this look familiar to you like one of the KFC AM Breakfast - Blueberry Pancakes?

So if you like pancakes, blueberry, honey and cheese do try this recipe and I am sure you would love it as much as we do.


Ingredients: (makes 6, 12cm diameter pancakes)
100g Plain Flour
1/2 Teaspoon Double Acting Baking Powder
180ml Fresh Milk/Buttermilk
1 Egg, 60g
70g Caster Sugar
Pinch of Salt

Filling And Garnish:
80g Fresh/Frozen Blueberry
Plain Yogurt/Cheese Wedges
Honey

Method:-
1. Sift plain flour and double acting baking powder together.

2. Beat egg and sugar until creamy and fluffy (about 3 - 4 minutes) before stirring in the flour mixture.

3. Next add in remaining ingredients, mix well to form a smooth batter.

4. Set batter aside in the fridge for about 30 minutes. Remove stir-in the blueberry and get ready the frying pan for cooking.

5. Heat up a non-stick pan, lightly grease it with cooking oil and add in 2 tablespoon of batter, swirl pan and cook the pancake over medium low heat.

6. Turn the pancake over when you see large air holes appearing on it and cook for another 1 minutes or less depend on its thickness.

7. Spread some some cream cheese or top with cheese wedges on the pancake, drizzle some honey over it and serve immediately with some extra blueberry according to your preference.

Potato Pancakes – Delicious But They Go Right to My Thighs

There are few foods I enjoy eating more than a plate of crispy-edged potato pancakes. Unfortunately, Ive been trying to limit my carbs lately (I just cant let go of my dream to become a famous underwear model), so seeing all these amazing Latkes recipes that pop up during Hanukkah is really hard.

Anyway, just because Im not partaking doesnt mean you have to deny yourself this exquisite pleasure. Below youll see my version, which has always received rave reviews. These are garnished with smoked salmon, but my favorite way is to simply enjoy them topped with applesauce and sour cream. Fish pancakes Fisklummur

My mother sometimes deliberately cooks more fish than is necessary for one meal, and uses the left-over fish and potatoes to make these pancakes. They are popular with the whole family, and an excellent way of using up leftovers and getting finicky eaters to eat fish.+

This is really more of a guideline than a recipe. It recipe will yield enough pancakes for 2 people.

Take leftover cooked fish pieces (preferably plain poached or steamed fish, about 1/2 a fillet), remove any bones and flake with a fork. Put in a bowl with finely chopped, cooked potatoes (2-3 small ones); one small, finely chopped onion; and garlic to taste.

Stir in some flour (approx. 3 tbs in a recipe for two), and 1 tbs potato starch or cornflour. Flavour with salt and your favourite fish spice mix . Add one beaten egg. Thin with milk to the consistency of thin porridge. Fry in a medium hot skillet until golden and serve with potatoes, melted butter, and tomato wedges on the side.
