Lemon Velvet Pie

I hope you all had a great Thanksgiving! We sure did. My little brother Doug came down from Salt Lake to spend the weekend here. It was so nice to see him again and catch up. It had been a long time. Hes moving to New York City in January. It makes me sad hell live so far away, but at the same time Im happy for him. He has accomplished so many things in his life and I could not be any more proud of him. Love you Doug!

As for this lemon pie, it really was amazing. It was one of the MANY we had for dessert after our Thanksgiving feast. You would not believe how many pies we had! It was so awesome. This one in particular was a huge hit! We all loved it. Ive never had anything like it. It is very creamy, velvety and lemony. Totally delish!

Lemon Velvet Pie
Adapted from: Plain Chicken

Crust:
1 1/2 cups graham cracker crumbs
5 Tablespoons sugar
1/3 cup butter, melted

Filling:
1 teaspoon unflavored gelatin
2 Tablespoons cold water
6 egg yolks
1 1/2 cans (14 oz cans) sweetened condensed milk (2 cups)
1/4 cup whipping cream
1/4 teaspoon salt
1/2 cup fresh lemon juice

Topping:
1 cup heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla

Preheat oven to 375 degrees.

For the crust:  Combine all ingredients and press into a the bottom and sides of an 8-inch springform pan. Or you could use a 9-inch deep-dish glass pie plate.

In a small bowl mix together the gelatin and cold water. Let stand for 5 minutes. Heat in microwave for 14 seconds. Set aside.

For the filling:  In a large bowl combine egg yolks and sweetened condensed milk. With an electric mixer, beat on high speed for 2 to 3 minutes until well combined. Beat in gelatin, whipping cream and salt on low speed. Add lemon juice and beat on low for 30 seconds. Pour into prepared crust.

Bake for 22-25 minutes or until center of pie looks set when gently shaken. Cool for 1 hour. Cover loosely and refrigerate atleast 2 hours or more before serving.

For topping:  Place the heavy cream in a chilled mixing bowl. Whip until the whisk begins to leave tracks in the bowl. Add sugar and vanilla and whip until cream holds medium peaks. Spread on top of pie and serve!

Smores Pie

I love Smores, but who doesnt? Marshmallow, chocolate and graham crackers... Its a winning combo! The only thing I dislike is the mess they make when you eat them. Sure some people think thats the fun part, but I dont. Im a clean freak and hate it when I take a bite into a Smore and all the filling oozes out the sides of the graham cracker and the rest lands on my shirt. Eating Smores in pie form makes me a happy girl. You eat it with a fork and let all the gooey marshmallow and chocolatey goodness just land in straight into your mouth. Right where its supposed to be! Mmmmm

Smores Pie
slightly adapted from: Cookies and Cups

1/2 cup salted butter
3/4 cup white sugar
1 large egg
1 teaspoon vanilla
1 cup all purpose flour
1 cup graham cracker crumbs
1 teaspoon baking powder
1 (7 ounce) jar Marshmallow Creme (dont use regular marshmallows)
4 Regular sized Hersheys Bars, broken into pieces
wax or parchment paper

DIRECTIONS:  Preheat oven to 350 degrees. Spray a 9 inch glass pie pan with baking spray.
Beat butter and sugar together until fluffy and combined. Add egg and vanilla until incorporated.
On low speed add in flour, graham cracker crumbs and baking powder. Divide the dough in half.

Press half of the dough in the bottom and sides of the prepared pie pan. Evenly spread the Marshmallow Creme over the bottom of crust. Spread the broken chocolate pieces on top of the Marshmallow Creme.

Form the remaining dough into a ball and place it on a piece of wax or parchment paper. Top with another piece of wax or parchment paper and flatten into a 9 inch circle with a rolling pin. Carefully peel off the top piece of wax paper.

Flip the crust onto the top of pie and peel off the other piece of paper. Pinch the dough together to form the crust. Bake for 20 minutes or until lightly browned. Cool completely and then slice and serve.
(When I served mine, I slightly heated up slices in the microwave and served with vanilla ice cream.. YUM!)
