Cheesy Mayo Tuna Toast

Sometime when I am rushing for time or we are bored with the usual rice or porridge dishes for lunch, I would grab a loaf of thick toast or baguette together with a can of tuna to make this Cheesy Mayo Tuna Toast. For this recipe I used PurpleBerry bread which I have found at one of the bakery near our area. We love the taste fruity fragrant of the bread as well as it natural purplish colour.


CHEESY MAYO TUNA TOAST


Often I love to use Tuna Chunk to mix together with some Japanese Mayonnaise and chopped shallot/onion. And in order to make it look more appealing I would do an open face sandwich which look more classy like cafe style. So even though this is homemade but with some quick adjustments and effort we could also serve cafe style brunch at home for our loved ones too!


(Serves: 2Preparation: 10 minutes |  Baking: 3 minutes)

Ingredients:
2 - 4 Pieces of Thick Toast
1 Can Ayam Brand Tuna Chunk In Olive Oil, drained
2 Shallot, finely chopped
1.5 Tablespoon Japanese Mayonnaise
1/4 Teaspoon Freshly Ground Black Pepper
Some Cherry Tomato, halves
Shredded Cheese

Method:-
1. Drain tuna chunk, pour it in a s small mixing bowl together with chopped shallot, mayonnaise and black pepper till well combined.

2. Spread the tuna mixture evenly among the bread slices, top with cherry tomato and shredded cheese.

3. Baked in a toaster oven for about 3 - 5 minutes till cheese melt and slight golden in colour.

4. Remove garnish with some parsley flakes and extra mayonnaise and serve immediately.

Tip:
~ You could use any tuna of your choice for this recipe.

~ Mayonnaise could be omitted for healthier choice.

Cheesy Chicken Sticks酥脆芝士鸡柳





Im doing a quick post here, a remake of my older recipe, with very little changes. I was trying to finish a pack of self-raising flour and I used it here instead of the normal plain flour. It works really well too.



Im re-posting the recipe here for easy reference. This is one of my meat-heating kids favourite. 




Ingredients:


  • 1 skinless chicken breast meat, sliced into strips

  • 1/2 tablespoon Light Soy Sauce 

  • 1/2 teaspoon Garlic Power (optional)


Coating:


  • 1 portion Breadcrumbs or Panko (Japanese breadcrumbs)

  • 1 portion Shredded Parmesan Cheese

  • 1 Egg, beaten

  • 5 tablespoon Self Raising Flour or Plain Flour


How to do it:


  1. Cut the chicken meat into strips

  2. Marinate with light soy sauce and garlic poweder for 30 minutes.

  3. Dust the chicken with flour.

  4. Dip the chicken in the beaten egg.

  5. Coat well with Panko mixed with Parmesan Cheese.

  6. Deep fry till golden brown.

  7. Dish and drain away excess oil.

  8. Serve with or without your desire sauce.






Note:


  • I used equal portions of panko and cheese here. You have choose to have more of cheese or more of panko if you like.

  • You can sprinkle on some chilli powder or paprika after frying too.

Cheesy Chicken Burger 芝士鸡肉汉堡





This is another easy burger. I tweaked the Chicken Burger with Corn and Cheese, I shared not too long ago.



This burger is more juicy because of the fish paste I have added. What you see on the burger is the Cheesy Chicken Patty with a slice of cheese and Caramelised Peppered Bacon.








Ingredients:


  • 1 Chicken Breast Meat, minced

  • 200g Fish Paste (optional); it will make the patty juicier

  • 2-3 slices Cheese of your choice, diced (you can use any other shredded cheese.)

  • a dash of Pepper

  • Breadcrumbs or Panko

  • Oil for frying




How to do it:


  1. Mix minced chicken with fish paste together, if using.

  2. Mix well with peper.

  3. Sprinkle cheese and fold in till well mixed.

  4. Scoop desired amount coat with breadcrumbs

  5. Deep fry or shallow fry till golden brown.

  6. Dish and drain on paper towel.

  7. Serve as a burger or as it is.






Note:

Experiment with different type of cheese for different effect when biting into the burger. Im just trying to clear the bits ad pieces of cheese leftover from making lunchboxes for my kids.

Cheesy Surf and Turf


Lately, theres a change in taste of fried food for my kids. They dont want me using breadcrumbs; not even Panko.

So what do I use here you ask? (Powdered) Parmesan Cheese. They sure got expensive taste buds. It was all my fault actually. There other day, I ran out of Panko so I experiment using Parmesan Cheese on my Chicken and they loved it. I didnt really like it though. I find it a little bit too bland. The seasoning wasnt done very well. You will hear from me about that when I improve on it. ;)

Anyway, after that, they have been asking for anything to be fried using Cheese and not Panko or breadcrumbs.

Cheese Crust Chicken


I had intended to use the fish and prawns for something else and my son said he wanted to eat at Long John Silvers. I told him I will that do for him :P and we can save the money. But of course, my meal doesnt comes with Coke ;) which is what he wanted most. Hahaha ...

So to make things difficult for me, he wanted me to use Cheese for the crust. Rrright. So Im spending more money now? Lucky for me, I bought the Parmesan Cheese during a sale and it was one for one. :)

I didnt give the seafood much seasonings. Too much might mask the taste of light cheesy crust. Just some light soy sauce and pepper 15 minutes before Im ready to cook.

Then dip them in the following order ... Cornflour (dusting), beaten egg, (Powdered) Parmesan Cheese and straight into the hot oil for frying till golden brown. Drain them on paper towel for the excess oil and you can have them straight. We like it without any sauce.

So, if you ran out of breadcrumbs and have Parmesan Cheese to spare, try this out for a change.

Cheesy Potato Casserole



   This Potato Casserole is a mix between the one my Mom used to make, and one I found on the bag of my frozen hashbrowns a few years ago. This is a perfect side dish to any ham or chicken dinner. Ive even made it for breakfast. It is very comforting and yummy. I actually decided next time I make it, Im going to throw in some chopped ham, and itll be a complete dinner in itself. I love it when you can turn a side dish into a main course with hardly any effort! With our hectic schedule, I am always trying to think of ways to make dinner time easier!



Cheesy Potato Casserole

1 (2 lb) bag of frozen Hashbrowns (shredded or diced)
2 cans Cream of Mushroom Soup
1 (16oz) container of Sour Cream
1 small Yellow Onion, chopped OR 1 bunch Green Onions, sliced
2 cups shredded Cheddar Cheese, divided
Salt and Pepper, to taste
1 cup Corn flakes, crushed
2 Tablespoons Butter, melted
1-2 cups diced Ham (optional)


DIRECTIONS:  Preheat oven to 350 degrees. Spray a 9x13 baking dish with cooking spray.

In a large bowl, mix together cream of mushroom soups, sour cream, onion and 1+1/2 cups of the shredded cheese. Mix together well. Season with salt and pepper.

Add in frozen hashbrowns, and chopped ham (if using) and mix all together well. Pour mixture into the prepared baking dish.

Bake uncovered, for 45 minutes.

While potatoes are baking, mix together the crushed corn flakes, melted butter and the last 1/2 cup of shredded cheese.

When potatoes are done, remove from oven and sprinkle the top evenly with the corn flake mixture. Place back into oven and bake another 15 minutes or until top is golden and bubbly. Let stand 5-10 minutes before serving.
